I am a breastfeeding, cloth diapering, trying my hardest to be eco-friendly, stay at home mom to my two daughters. I'm not always crunchy though...you might call me a Soggy Granola Mom - not quite mainstream, not quite crunchy.

Lite Carrot Cake
Delicious for a light cake. It wasn't as rich as carrot cake normally is. Much lighter, but still had the right taste.

Best Fried Green Tomatoes
I had trouble with the cornmeal ending up in the pan of oil and burning up. This created a mess and it stunk. But the actual fried tomatoes tasted good. I'm just not sure about the cornmeal.

Crustless Spinach Quiche
I used muffin tins. They were delicious! Perfect for making an egg sandwich with an english muffin.
