Sean's Falafel and Cucumber Sauce

Only needed 1/2 of the sauce. The spice and bread crumbs were the correct amounts for me. I made the patties and put them into the fridge until I was ready to cooks them. Next time I will make them into little balls --like mini meatballs. My kids even ate this (one with ketchup).

Vegetarian Korma

I doubled the curry powder and used an 8oz can of tomato sauce. I also used coconut milk instead of cream. Next time I will add more red bell pepper (b/c I like it!) and maybe another jalapeno pepper. YUM!

Coconut Curry Tofu

I would add more curry and more chile paste. Also, I would half the tofu and add bamboo shoots. I loved the bok choy and the bell pepper. It was also good with jasmine rice.

Bacon Quiche Tarts

DAIRY FREE! So I modified this recipe to make it dairy free. I used dairy free biscuit dough (food lion brand), sausage instead of bacon, toffuti cream cheese (only about 3 oz), no swiss cheese and rice milk. The result, not bad! I will make them again and try bacon!

Tofu Lasagna

I made this WITHOUT the cheese. I also did not mix the sauce and tofu. Instead I layered the tofu mixture, noodles and the sauce. My 2 and 7 year old LOVED it! I will make this again.

Breaded Chicken Fingers

Wow...these are actually quite good! My son is allergic to eggs and dairy so I used rice milk and a tablespoon of lemon juice --no egg. I also made my own bread crumbs (from this website) and added oregano and parsley. I double dipped them too. Thank you for the recipe!!!

Beef Barley Vegetable Soup

Add all ingredients except barley into the crockpot. Cook on low for 9-10 hours. Add barley during the last 40 or so minutes.

Baked Ziti I

I made my own sauce for this recipe. My family and guests loved it. I mixed the sauce with the noodles before layering the casserole. I cooked it covered. This recipe made enough for me to make a 8x8 dish and I froze it. I let it thaw for about 24 hours and baked it at 350 for about 30 minutes. The noodles were a bit soft but it still tasted great!

Rich and Creamy Tomato Basil Soup

I have made this recipe several times now. I cannot tell the difference between the fresh and canned tomatoes. Canned tomatoes are WAY easier! I do use free basil and add plenty of pepper and some salt. I have also made this with dairy free butter and silk soy cream. It isn't as good as the original but, it allows my son to enjoy the soup!
