Spanish Flan

Reviewed: Oct. 14, 2008
Best flan I’ve ever made. To make it lower in fat I used the fat free condensed milk, fat free evaporated milk and egg whites. I also used half a cup of sugar, that made enough caramel for my flan. Came out great.

Chantal's New York Cheesecake

Reviewed: Oct. 14, 2008
Great cheesecake recipe. First time I’ve made a regular cheesecake. I made a peanut butter cheesecake once before and that came out great, but the peanut butter and cream cheese was easier to mix together. When mixing the ingredients use and electric mixture or a blender if not your mixture will clump. Please follow the cheesecake rules! Google them, if you don’t your cheesecake will crack.

Smooth and Creamy Peanut Butter Pie

Reviewed: Jan. 26, 2009
Use an electric mixer and make sure your cream cheese is room temperature. Very good and not as heavy as peanut butter cheesecake.

Really great and easy! Please be careful with the different Hershey kiss flavors, as another reviewer said they all melt in different amounts of time.

Oven-Baked Caramel French Toast

Reviewed: Jan. 26, 2009
Came out great! I made half the amount for me and my boyfriend. It made four nice size portions. I used Challah bread and it came out great. I split all the ingredient measurements in half and refrigerated overnight. When I make it again I will use the FULL egg mixture (step 3 of the directions). The Challah was a little dry on the top layer. Caramel Sauce was great and so easy! Thank you for submitting this recipe.

Chicken Pot Pie IX

Reviewed: Jan. 26, 2009
Amazing! I’m now a chicken pot pie fan; I made it for my boyfriend’s birthday. SOOOO good. I made a few alternations. In fear of making it too dry I followed one of the reviewer’s ideas to make double the liquid. No celery seed and no celery, not a fan. I did add some mushrooms to the veggie mix. I used pearl onions instead of chopped onion. I cooked the mushrooms, pearl onions and I added bacon to them to give it some extra flavor. I double the flour, butter, salt, pepper and milk. If you use bacon like I did go easy on the salt, it could be too salty. As for the chicken broth I used 2.5 cups I didn’t want to make too much liquid. TASTE the mixture before putting it in your pie; it won’t change much after it’s cooked. Remember the chicken and veggies are not seasoned, so your sauce should be pretty flavorful. If you make the mixture as thick as I did it’s going to sit on top of the chicken and veggie mix, do not fear it will sink down when you cook it. Enjoy! Hope the tips help!

Really good. I used breakfast sausage. Use a whisk to avoid clumps. I cut the sausage links to half inch pieces.

Cheddar-Thyme Flaky Biscuits

Reviewed: Jan. 26, 2009
First time biscuit maker! I really liked them. Didn’t use thyme or cream of tartar. I used block cheddar and I shredded it myself, made the biscuits tastier. The dough was incredible easier to work with. I cut the circles using a disposable plastic cup, the size was perfect. Next time I think I’m going to use less sugar and maybe add some bacon into the dough. I’ll keep you posted. Hope the review helps!

Flavorful Flounder

Nice Flavor. Words of advice never ever use frozen flounder, it becomes water logged and the recipe became mush.

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 16, 2009
Really good recipe. I used 3 egg whites instead of the 2 whole eggs. I also ran out of cream cheese I only had 12 oz of cream cheese I substituted the other 4 oz with ricotta cheese. I used fat free cream cheese. I added a layer of pecans. For some reason at the grocery store I went to the whole pecans were less expensive than the chopped. I chopped them up at home. I then drizzled caramel topping onto to it and a layer of whipped cream. I used the caramel ice cream topping. It came out delicious.

Shepherd's Pie VI

Reviewed: Nov. 12, 2010
I thought it was a great recipe, the broth and the flour gave the meat a nice creaminess. I added some garlic powder and paprika, to give it a little bit more flavor. I would add more vegetables any time I made shepherds pie I add a variety of veggies. Maybe some canned mushrooms, turnips, corn, peas. Anything to make it more hardy.

Gourmet Sweet Potato Classic

Reviewed: Nov. 23, 2010
It came out really good, I used 2 cans of the canned yams drained. I did put some liquid to the side and added some after mixing in all the ingredients. I also didn’t put nuts in because I made it for a work party. For the crumble, I just put a layer of brown sugar and then a layer of marshmallows. BUT next time I will do the crumble topping suggested. Not super sweet but really good.

Angel's Old Fashioned Beef Stew

Reviewed: Nov. 23, 2010
I made my own variation. I used canned potatoes, canned mushrooms, baby carrots chopped up and boiled and regular onion ½ of one is good. Turnips or squash chunks would be an idea to add in too. No celery. I also added a cup of water while cooking so it wasn’t as thick. It may have been the water added but taste after everything is cooked, it was a tiny bit bland, but still good, nothing a little salt can’t fix!

Wild Rice Stuffed Acorn Squash

Reviewed: Jan. 3, 2011
Honestly I completely did my own thing; I give it a 5 star rating because of the concept of stuffing the squash. I’ve made two different stuffings for these and they both came out great. I love using leftovers to create new meals, I don’t like to waste. The first stuffing I made was with brown rice, finely chopped mushrooms, some onion; I also threw in some leftover lean pork cooked with fresh garlic. I had some extra beef broth so I used that and some regular stuffing mix I also had left over. Make sure your stuffing has a strong flavor; the acorn squash itself has a light flavor to it. The second stuffing which I made last night- I used brown rice again, sautéed onion and left over turkey meatballs, I used a cheese grater to grate them, beef broth and stuffing mix. I wasn’t too crazy about the flavor at first so I added, garlic powder, salt and pepper, teaspoon of butter and a little milk. I don’t measure much when I do my little creations, so I wouldn’t recommend this unless you cook the same way. Constantly taste before adding new things! Hope this helps.

Yogurt Chicken

Reviewed: Jan. 3, 2011
Hmmm…. Mine didn’t come out like the picture and it wasn’t very crunchy. But it was still good. I think I put too much yogurt because the side of the chicken that touched the pan the crust was super moist and came off the chicken. I added some shredded cheese on top of the cutlets to add flavor. It was tangy and different!

Pumpkin Turkey Chili

Reviewed: Jan. 10, 2011
Woah!! So amazing. I great way to incorporate pumpkin, it gives the chili an amazing creaminess. Didn’t follow the recipe exactly…I used what I had. I didn’t have any peppers but I did use onions, I added corn and beans as well. I also used a small can of tomato sauce instead of the crushed tomatoes. I also added cumin and more salt and pepper. I didn’t do the cheese and sour cream because it didn’t need it and to cut calories but it would have been awesome with the cheese and sour cream.
