Alternative Baked Salmon

Reviewed: Apr. 22, 2009
This was so good. My husband and myself loved it. I gave it 4 stars because the breadcrumbs were dry with the current recipe - as some of the other reviewers mentioned - but i did not take the suggestion of adding more mayo - instead i remedied this by melting some butter to moisten the bread crumbs. Served the salmon with some brown rice and cooked spinach - a delicious meal. My husband suggested to moisten the bread crumbs by adding an egg - kind of like what you would do with a tuna or salmon burger - i will try that next time.

Salmon with Creamy Dill Sauce

Reviewed: Oct. 25, 2008
This was a good and easy to make dish. We loved it. Only comment is that you really do not need all the sauce that the recipe calls for - I QUARTERED the sauce measurements and it was MORE than enough for the 1/2 pound of salmon fillet. I also used dry herbs and it was fine. I would make again.

Pasta de Sardine

Reviewed: Oct. 17, 2008
Very delicious dish. I give it 4 of 5 stars because i think it called for too much garlic & onion. it seemed to overpower the dish. I think using half the garlic & onion in this recipe would be just fine. I used the sardines in olive oil and added some sliced cherry tomatoes and 2 tablespoons of marinara sauce - it was delicious and unique - I will be making this again!!!

Asparagus Cashew Rice Pilaf

Reviewed: Oct. 14, 2008
This is DELICIOUS!!!! I made some substitutes: instead of butter I used olive oil (just enough to coat the saucepan); instead of asparagus I used sweet baby broccoli; and I used spinach spaghetti instead of regular. I too toasted the cashews like the other reviewers suggested and this dish came out awesome.

Banana Tortilla Snacks

Reviewed: Oct. 14, 2008
This was a terrific idea. I used whole wheat wraps, Instead of peanut butter I used almond butter. I left out the raisins & honey - I recommend this snack.
