Sopapilla Cheesecake Dessert

Tonight is now the 5th time I have made this recipe, and the requests keep coming. This is by far the EASIEST and probably cheapest recipe I have ever done for potlucks, and it has gotten RAVE reviews from coworkers. If you need something quick for a get together, definitely give this a try!

Tangy Honey Glazed Ham

This glaze saved my boring christmas ham. I overdid the orange zest, and did not have pineapple juice on hand (subbed extra orange juice), but it still was excellent. Next time I will make sure I have everything on hand that I need, this is a keeper!

Pineapple Pretzel Fluff

Excellent recipe! Easy, delicious, boyfriend approved. I did have a little trouble with all the pretzels sticking in clumps when they baked, but I just broke them in pieces again when it cooled.

Dark Chocolate Bacon Cupcakes

These take dessert to a whole 'nother level. Bacon and (I used) espresso add that extra depth of flavor to the batter. I also added mini chips to the mix. I agree with other reviewers who said to fry the bacon really well before chopping. Next time I will try the recipe without the bacon, but this was an awesome first of baking with bacon.

Rich Chocolate Frosting

Excellent frosting and super easy! I can see why another reviewer's husband wanted just a bowl of this for his birthday treat. It became fudge-y after sitting in the fridge overnight before putting on cupcakes. Rich and delicious, this is a keeper.

Excellent! I followed the modified version by reviewer Tea Elle and the brown sugar on top added just that little bit of crunch. I am always on the lookout for milk free baking recipes, and I will be using this one again.

Spaghetti Squash Saute

This was my first time making spaghetti squash and it was wonderful! Definitely different than pasta, but I agree with some of the other reviewers that it tasted awesome just by itself with EVOO and spices. Even my carnivorous BF loved it. The only changes I made was microwaving, as others suggested, instead of baking in the oven.

Lemon Whippersnappers

This cookie has been a family recipe used for decades. I have made them with pretty much every flavor of cake mix out there, the lemon and strawberry are my favorites. Last year I even won the cookie cook off at work with it, where people who don't even like lemon LOVED the cookie! I am asked constantly to bring some in as well. Hint for keeping the stickiness down: Drop the spoonful of dough into the powdered sugar, using only one hand to cover the doughball first and then rolling in the sugar. The other hand should be used to push the dough off the spoon (so one wet ingredient hand and one for dry). Also- keep the dough refrigerated between batches in the oven. This dough should be kept cold or it won't crackle and spread. Edited to add: I won the cookie bake off at work again this year with these cookies. Everyone raves about them!
