I make a version of this dish all the time- sautee chicken with kosher salt, pepper, minced garlic, ground onion & mustard. Then sautee sundried tomatoes. I use thin chicken breasts so I can 'stuff' a layer of the tomatos along with feta or goat cheese in the middle between the 2 pieces of chicken. I'll serve it with cooked green beans that I quickly toss in the chicken 'sauce' mixture along with a few extra tomatos and cheese to give them a savory flavor. This dish is divine!
