Mostaccioli with Spinach and Feta

As is, I can imagine that the pasta would taste dry. I added some light cream and allowed the feta to melt to create more of a sauce and it was a tasty pasta dish!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Tasty way to eat otherwise boring porkchop! Would be great with chicken also. Loved the sweetness of the tomatoes with the saltiness of the feta and the balsamic rounded everything out!

Black Bottom Banana Cream Puffs

These were nothing fabulous. I think a melted chocolate mixture of semi sweet choc chips and oil would have been a better chocolate taste than the hot fudge. The pastry toughened a bit after being in the fridge. I would opt for another dessert before making this again.

White Chili with Ground Turkey

This was good with the alterations I made. Ground chicken, about 2 1/2 c broth, 1/2 T spices, only 1 can white beans, cheddar jack cheese since that's what I had on hand, a little cream and a little asiago cheese. Very delicious! Added just a sprinkle of cinnamon since I wasn't too sure if we would like it. we liked it alot!

Jalapeno Popper Spread

Yummmm!! I halved the recipe and added half the Parmesan with some cheddar jack cheese. I bet it will be even tastier after it sits and the flavors meld. I thought it was even tasty cold! Great with pita chips!

Sausage Brunch Casserole

Per others suggestions- I baked the crescent rolls for 5 min first at 350, used 5 eggs, and added red peppers and onions with the sausage! Also added cheddar and cheddar Jack cheese! It was a hit for my holiday brunch! Will definitely make again!

Spinach Tomato Tortellini

This was quite good-hubby didn't even complain that there was no meat. Minor changes- fresh tomatos, more parm cheese, skim milk with light cream (1/2 c each with 1T flour was perfect amount of liquid). I would maybe add in some sauteed onion and chicken sausage maybe.

Stuffed Green Peppers I

these were my first attempt at stuffed peppers. I modified the recipe a bit- used 2 regular tomatoes diced up, brown rice (cooked separately and added into cooked meat & onions), fresh minced garlic, and one can tomato soup added to meat & rice mixture without adding any water. cooked for 20 min. and they were perfect! gave it 4 stars only because it did not have a ton of 'wow' flavor which I think if made with sausage it may have. Overall- I would make these again!

Summer Pasta with Basil, Tomatoes and Cheese

I thought this was very tasty even without the fresh mint and sherry cream (didn't have any ). Followed other ingredients the same. I reserved a bit of the pasta water and added to the cooked pasta and tomato mix. The cheese did tend to clump a bit while melting. I mixed with a fork until mostly melted and tomatos added. The pasta water helped that. I used angel hair pasta. This will definitely be on my meatless Monday menu again!

Chocolate Zucchini Cookies

I followed others advice and did 2 c of zucchini and added chocolate chips and 1/2 t cinnamon. These came out with the perfect amt of chocolate and cake like. If you want them 'fudgier' slightly undercook them. I tried using my stoneware pan and they needed much longer than 8-10 min to cook and were quite undercooked at that time frame. I would make these again!

Cheddar Ranch Dip

i was not crazy about this dip nor was my husband or his brother who like anything! I followed the recpe with the bacon bits-but think real bacon would have made a big difference. I have made lots of other dips that were much better so probably would not make this again. It was ok served with chips or tostitos but couldn't imagine trying to eat veggies with it. A cucumber slice didn't taste good with it. Give me plain old ranch dip for veggies anyday.

These are excellent I make them all the time! I accidentally used a serrano pepper instead of jalapeno one time and it was extra hot for those that like it spicy!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was tasty- a bit spicy with 1/2 t cayenne I will try a little less next time. Needs some onions as well and liked the sour cream consistency though you could probably use some light cream for same result. Chicken could be added too- this made plenty of sauce which was good.

Baked Potato Soup

My husband and I demolished this! Very tasty- made recipe as is with less basil as recommended by others. I also mashed about 3/4 of the potato mixture as I don't like chunks of potatos in soup. I was kind of confused about how to cook the potatos so boiled them 15 min before adding the half and half.
