Easy Key Lime Pie I

Reviewed: Mar. 25, 2011
I've made this twice now....sooo yummy! My hubby loves it, and he's the key lime pie expert! Thanks for sharing such an easy recipe! I'm not sure now where I read this, but I've been taking the advice of a fellow reader to juice the limes in a garlic press. With some of the smaller limes, I just cut them in half so they can fit. If they are larger, I quarter them. It makes juicing them so easy...just make sure you point the juicer way down in a large bowl or it will squirt everywhere! Thanks again for a "real" tasting key lime pie!

Peach Cobbler Dump Cake I

Reviewed: Feb. 24, 2011
O.M.G! Amazing! I accidentally used pie filling instead of peaches in syrup...and it still turned out great! I used pampered chef's "cinnamon plus" blend and it really brought out the flavors. I'm sharing this recipe with all of my friends! Thanks for sharing!

Spicy Rapid Roast Chicken

Reviewed: Feb. 20, 2011
I'm not sure why there are reviews saying this chicken is dry...I have made it over 10 times with very consistant results...meaning a very tasty, moist chicken (with no cover on the chicken)! I truly appreciate a recipe as yummy and quick as this one! My husband asks for this at least once a week and I'm happy to oblige. I love how the skin gets crisp and how the chicken stays moist...I'm pretty sure I add more paprika (I use smoked) to the mix and use fresh oregano from my garden and stuff the inside of the bird with it as well as putting it on the skin with the other herbs. I also cut a lemon in half and also put it in the cavity...but the recipe is just as good on it's own. I always serve this with dilled carrots and roasted rosmary new potatoes. Thanks Nancy for a wonderful, quick recipe!

Red Velvet Cupcakes

Reviewed: Feb. 16, 2011
I made this for my sweetheart on Valentines day...it was really good! I made a double layer, heart shaped cake with this instead of cupcakes. I increased the sugar a bit as other users have recommended...just 1/4 cup more. I'm not sure if there's really such thing as a moist red velvet cake...(I was wishing this had been just a little more moist)...but as I shared this with the girls at work the next day no one shared in my thoughts of dry cake! It was gone in a flash and everyone was raving! Thank you for sharing this recipe....oh and just a thought...if you are making red velvet cake on Valentine's day, make sure you buy your red food coloring before the big day. I had to go to three stores to find it, they were all out!

Jenn's Out Of This World Spaghetti and Meatballs

Reviewed: Jan. 23, 2011
This was AMAZING! I've never been able to find a good and easy homeade marinara before, 'til now! I did decrease the amount of sugar due to other's suggestions, but also added half a jar of roasted red peppers that were hanging around in the fridge that needed to be used up. I used my immersion blender to chop it all up in the end after simmering but before I put the meatballs in. This was so good that my hubby and I had nothing to say while eating...we had the most quiet dinner of our lives! Thanks so much for sharing this winner!

Chicken Soup III

Reviewed: Jan. 23, 2011
Would love to give this 5 stars, but as-is it's too salty! I ended up adding several more cups of water to dilute the saltiness. In the second step I added extra carrots and celery for nutrition's sake, and a few cloves of garlic (I was trying to chase away a cold). I also only had fresh parlsey so I just added what I had and it all came out great! Thanks for sharing this recipe, I've always wanted to know how to make "real" chicken soup from "scratch"! It was well worth the work and time involved!

Delicious Black Bean Burritos

Reviewed: Jan. 14, 2011
These were really good and really easy to make! I took the advice of others and added a can of drained rotel...and a dash of cumin and chili powder added flavor. I also served it with big slices of avacado....yummy and light! Thank you!

Bierox Casserole

Reviewed: Jan. 13, 2011
OMG this was SOOOO GOOD! My husband and I used to make bierochs from scratch but we are usually too busy to do that anymore. I was really skeptical of this recipe but it was amazing! I did end up putting in two cloves of garlic because they were on the small side...and I just couldn't use velveta for health reasons, so I cut the amount of cheese way down and just used shredded cheddar and it turned out fabulous! Thank you so much for sharing this easy, delicious recipe! Top 5 recipe for us now!

Mama's Asian Chicken and Rice

Reviewed: Jan. 12, 2011
This dish was really good! I think next time I will take the advice from others and double the sauce, as our rice was bit dry. We also may stir in some vegetables with this dish...it seemed to be missing "something" but the sauce was awesome and we will be making this again! Thank you for sharing!

I'm sorry, but we just didn't like this at all. Very bland...needs herbs or something. Also calls for a lot of butter...

Creamy Split Pea Soup

Reviewed: Dec. 30, 2010
This is AWESOME! I've never made this soup before, or even eaten it before...but I needed something to help me use up the leftover ham we had from Christmas. I used chicken stock for half the fluid, and added carrots since so many other recipes call for them, and also added 1/2 tsp dried thyme...my hubby was very unsure of this green, strange looking soup but was very pleasantly surprised and ate two big bowls of it! I served it with some herbed soudough rolls we always buy at Target's bakery and it was a great meal! This is now one of our family favorites, and happy to be putting some in the freezer for a quick supper on the nights I come home late from work and need something fast. Thank you so much for sharing this yummy recipe!

Bananas 'N' Cream Bundt Cake

Reviewed: Nov. 20, 2010
I thought this tasted pretty good...but it just seemed like banana bread baked in a bundt pan. I wasn't very impressed but the people at work all seemed to like it just fine as it was gone within a 12 hour shift. It sure is a lot prettier baked in the bundt pan!

Banana Oatmeal Crumb Cake

Reviewed: Nov. 20, 2010
I took this to work and everyone loved it! I too, added a tsp of flour to the topping like the other reviewers said and it held together nicely. I found that this needed to be baked longer than said on the recipe...I had a very wet middle but no one seemed to mind! Very yummy, easy, and a little different than just plain 'ol banana bread! Thanks for the recipe.

Corn Bread Hamburger Pie

Reviewed: Nov. 10, 2010
I made this just as the recipe called for and my hubby LOVED it! I liked it too...but thought it needed something else. The next time I made it I added 1 cup of mixed veggies to the mix and it came out FANTASTIC! This is an easy, yummy recipe that is very forgiving of chef tinkering. It was quick and easy for me to make after a 14 hour shift and the base recipe would for sure be a hit with picky eater kiddos. Thanks for sharing this recipe, I love it!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 20, 2010
I love this recipe! I made a few weeks ago and my coworkers loved it! I have found it takes the loaves a little longer to bake in the oven that what says on the recipe. I also added a tsp of vanilla, and an extra tsp of cinnamon but this was just 'cause I'm a cinnamon freak. This is definitely better the next day! Thanks for the awesome recipe!

Chicken Salad

Reviewed: Sep. 29, 2010
This was DELISH! We didn't have water chestnuts or bacon, so I added a few chopped walnuts and apples instead. LOVED IT! We are both big fans of the chicken salad sandwhiches from Arby's and the hubby said this was MUCH better, I had to agree! I toasted the bread and used a bit of spinach for a bit of green and to make it a bit healthier...this will forever be my favorite chicken salad recipe!

Anytime Fruit Salad

Reviewed: Aug. 25, 2010
My mom has made this for me and my brother our whole lives...it is required fare for our birthdays, Easter, Thanksgiving and Christmas...we eat it politely at the table and then fight like only a brother and sister can over the leftovers! Over the years we have tried to find ways to make this healthier, and have decided that no-fat cottage cheese is not a good idea, but 2% cottage cheese, low cal whipped topping and diet jello are indeed okay! Around our house, we just call it "Orange Stuff" and/or "Orange Fluff". It is amazingly delicious and simple!

Three Bean Salad

Reviewed: Jul. 22, 2010
This was amazing! I was trying to use the many green beans I have from the garden this time of year. I wasn't sure if I had exactly the right amount of beans but it all turned out great. I used fresh green beans, yellow wax beans and heirloom dragon's tongue beans and steamed them for approx 5 min before mixing this all together. I may decrease the amount of sugar next time as it was a bit too sweet and I also used just a dash of celery salt as I didn't have any celery seed on hand. I am super in love with this recipe overall and will be making it again and again. Thank you very much for this recipe!

Pumpkin Black Bean Soup

Reviewed: Nov. 2, 2009
I think the soup was a little runny, I, like others would reduce the number of cans pureed to one and leave the other two whole as well as reducing the amount of beef broth. I realized towards the end that it needed more spice and added thai red pepper sauce for some heat, cumin, smoked paprika and cayanne. I think coriander would be good too...didn't think of it at the time....I didn't seem to taste the pumpkin so I'm hoping the next time I make it the reduction of broth will help bring the flavor through, overall though a very hearty soup. I didn't have any ham so I threw a little bacon in it and it added a nice, smoky flavor.
