Rich Chocolate Frosting

Reviewed: Jul. 6, 2011
Wow! The best chocolate frosting I've used yet! It was perfect for cupcakes. I recommend a high quality cocoa powder since there is such an intense chocolate flavor.

So delicious!! I used 1/2 heavy cream and 1/2 fat free evaporated milk to make it with less fat and still rich

Chocolate Butter-Creme Frosting

Absolutely delicious! I doubled this for 18 cupcakes (did not double the milk). I also added some good quality cocoa powder and this turned out AMAZING!

Ziti with Italian Sausage

Reviewed: Jul. 17, 2010
Loved the flavors! I recommend using fresh mushrooms and fresh garlic instead and adding fresh basil before you pop it in the oven. So yummy and practical!

Peanut Butter Pie VIII

Reviewed: Jul. 12, 2010
This had a delicious peanut butter flavor!! I decreased the sugar in the pudding because there is plenty sweetness in the PB crumbles. Instead of separating eggs for the pudding I used whole eggs and Cool Whip for the topping. It was perfect! Will definitely make this again!!

Classic Peanut Butter Cookies

Reviewed: Apr. 26, 2010
These were exactly what I was looking for. I added 1/2 t. vanilla and, like other viewers suggested, I added an additional 1/2 cup peanut butter and 1/2 cup flour. Also, I baked them for 8 minutes--don't overbake! They were soft and chewy. Reese's Pieces are a fun add-in too!

Raspberry Pie II

Reviewed: Apr. 20, 2010
This is a delicious recipe! I used frozen raspberries and increased the cornstarch to 1 T. and it worked well. It's important to note to adjust the sugar to the tartness of your berries.

Honey Cornbread

Wonderful!! I used 2% milk instead of heavy cream and it still turned out delicious. It is not too sweet which I was concerned about.

Potato Leek Soup III

Reviewed: Nov. 2, 2009
Wonderful, simple recipe! I used only 3 T of butter, 1% milk instead of cream, and multi-colored fingerling potatoes for color and variety. Will definitely use this recipe again! Thanks!

Zesty Rice 'N' Bean Casserole

Reviewed: Sep. 8, 2009
Very yummy meal. This is economical as well as hearty and delicious! We used orange bell peppers because they are less acidic and brown rice for more fiber!

The Best Thai Coconut Soup

Reviewed: Jul. 29, 2009
Enjoyed this but made some changes. I used light coconut milk and would definitely use the stalk of lemongrass istead of chopping it up; I didn't enjoy the chrunchy texture. I like the idea of rice, as previously mentioned. I sauteed the mushrooms in the beginning to add more flavor, used fresh garlic, and added the shrimp later because I used pre-cooked shrimp.

Lemon Square Bars

I omited the baking powder and added lemon zest to the crust and filling. I also used 1/2 the amount of sugar in the crust. It was so yummy! A great dessert for the beginning of summer!

Pecan Snack

Reviewed: May 7, 2009
Very very good. I used vanilla with the water. I used mostly brown sugar and tripled the cinnamon. Great suggestions from others. I also used a 9x13 pan so it was easier to stir.

Oatmeal Peanut Butter Cookies

Reviewed: Apr. 21, 2009
The best peanut butter oatmeal cookie I have come across! I used butter and crisco for the flavor and texture. I doubled the oats and it was perfect for us. I omitted the salt because it is salty enough from PB and decreased the white sugar to 1/2 cup. I may add peanut butter chips or chocolate chips in the future but this recipe is rich enough with 1 cup of PB.

Black Beans and Rice

Reviewed: Apr. 2, 2009
Very yummy! I added an extra garlic clove and diced fresh tomatoes on top at the end. It had just the right amount of onion and spices. I only had one 15 oz. can of beans and that was fine. Loved it!!

Pancit

Reviewed: Mar. 13, 2009
This was very easy yet delicious. However, the presentation was not so lovely. The noodles were so porous that they soaked up the soy sauce and was brown; plus, the veggies didn't stick to the noodles. Hubby loved the flavor! I used yellow pepper, carrots, broccoli, mushrooms and shrimp and added a tsp. of sesame oil to the olive oil I sauteed them in. That's what's great about the dish--you can add whatever veggies you have on hand!

Mushroom Orzo

Reviewed: Mar. 2, 2009
I only rated it 4 starts because I made so many changes. It is a very good dish!! I increased the liquid 1/2 cup. I used chicken broth instead of water and salt. I too increased mushrooms to about one cup and sauteed the onions, mushrooms and fresh garlic in about 1/4 cup olive oil instead of butter. Thanks for the recipe!
