Angela's Awesome Enchiladas
Wow... these were great! A bit time-consuming, but worth it. I used a half of a rotissiere chicken from the deli, which helped. I suggest before adding the enchilada sauce and cheese, spray the shells with cooking spray and bake on 425 for 10 minutes to crispen. I then added the sauce and cheese and finished baking at 350 for 15 minutes. I also added 1/4 tsp ground red pepper for a little heat... yum!

Festive Fresh Blueberry and Cranberry Relish
I made this last year for Thanksgiving and was asked to bring it again this year- which is saying alot because my family usually doesn't touch cranberry sauce- it was mostly put on the table for the "tradition"aspect. But this is one they actually eat and enjoy!

Stir-Fried Shrimp with Snow Peas and Ginger
This is a great recipe! I did make a few changes: doubled the sauce as suggested and added 1 tsp. of sesame oil to it and a few shakes of red pepper flakes. I also added sweet onion, broccoli, bamboo shoots, bean sprouts, water chestnuts and cashews. The cooking times are perfect with the veggies being nice and crisp. The beauty of this recipe is that it is a good basic recipe that is easily adapted to your taste. Husband raved over this one! Thanks for a great recipe... it's a keeper! (Next time I'm trying it with chicken.)
