Perfect use of a HUGE zucchini that my mom gave us. The bread came out really nice and moist. I was surprised because before I added the zucchini to the mix it looked like I was making cookies, but the water content of the zucchini moistened it right up. I didn't have vegetable oil so I substituted canola.
