Brooke's Best Bombshell Brownies

These were GREAT! I followed the recipe exactly as listed with one exception, I set aside a tablespoon or so of the flour/cocoa mixture to toss the chocolate chips in before adding them to the batter so that they didn't sink to the bottom. I baked them in a 8x10 pan and cooked them an additional 10 minutes. So thick and yummy!

Broccoli and Carrot Lasagna

This was really good, but needed some tweaking. I added chicken, fresh garlic and onions, and substituted cottage cheese with about 1/4 cup of half and half. I also used frozen veggies, just thawed them and steamed them. It was really easy and filling. Next time I would add a bit more spice because it was bland for my family's taste, but a really good start.

Beef Taco Skillet

Nobody in my house really liked the soggy tortillas, but the flavors were nice. I would make something similar to this in the future but with some additional spices and with noodles.

Wyoming Cowboy Cookies

Chewy, warm, chocolate and coconut goodness! I made four dozen cookies using this recipe and they were tasty hot out of the oven and after they cooled. I increased the baking time by one minute because they were so soft that they would fall apart when I tried to put them on the cooling racks. I will be making these again!

Turkey Pot Pie I

This was so good. I altered the veggies to use up the rest of some of our Thanksgiving feast. I also thought it wasn't thick enough for my taste so I added a a few tablespoons or so of left over turkey gravy. If you don't have any and want to thicken it up some cream of chicken soup would work as well.

Vanilla Glaze

Great, easy recipe. It had a lovely taste to it and you can make it as thin or as thick as you like by altering the amount of milk you use. I was going for a glaze that just sort of drizzled over the bread I made so I added additional milk. Worked out perfectly.

Pumpkin Gingerbread

This bread was not nearly as gingery as I would have hoped. If I make this again I will probably double the ginger. It needed more of a punch because it was kind of boring when made just as the recipe directs. This also made three loaves, not two.

Tacos in Pasta Shells

When I made this I did not have the patience to stuff the shells so I made it more of a casserole. I did not use the chilli powder, instead I used taco seasoning to taste. I cooked everything exactly as the recipe stated but my shells were medium so I mixed them in with the meat mix and poured it all in the casserole pan. Made it less time and energy but still tasted great!

You can not go wrong with this classic recipe. My only complaint is the cookies always go a little flat, but the taste reminds me of being a kid again.

Cheesy Fried Potatoes

These were really good but a bit of a splurge when trying to eat healthy. I'm sure it doesn't help that I had to add extra cheese and the husband wanted extra bacon! It was quick, easy, filling, and paired nicely with a side salad.

Cajun Style Baked Sweet Potato

The rub was excellent and I will use it for meat and other potatoes in the future. My husband and I are not big sweet potato fans but we decided to play with some flavors to see if we liked them prepared differently - we don't. The recipe was awesome and if you do like sweet p's I would definitely recommend this recipe.

Pumpkin Chocolate Chip Cookies III

These were really good. The pumpkin taste was not over-powering and they were awesome warm out of the oven. Almost bread like. I followed the recipe exactly and I'm not sure if/what I would change next time. Maybe play with the ingredients a bit to make it more cookie like and less cake like.

I suck at making the perfect pancake, always have. These were amazing, and so very fluffy! Next time I might add a little flavor to them (orange, pumpkin, etc.) but I will use this recipe again and again.

BBQ Pork for Sandwiches

I use this recipe every time I make pulled pork now. I make a huge batch and the left overs freeze beautifully! I really like to mix a honey BBQ sauce with a Bold one to get some really good flavor. Perfect to pop in the slow cooker before work and finish in the evening. I also like to toast the buns, put the pork on the bun, a slice of cheese and under the broiler until it melts.... makes it even more delish!

Baked Teriyaki Chicken

Sooooo Good! I made this with chicken legs and decreased the cooking time by 20 minutes and the chicken came out moist, full of flavor, and by the end of the meal all gone! I doubled the amount of sauce because I knew I would want to slather it on.

Baked Pork Chops I

It made my kitchen smell fantastic but I didn't like how I lost the crisp bread crumb goodness when I followed the recipe. The breading got soggy from the soup mixture cooking on it for so long.

Sausage and Broccoli Skillet

This was really good. I used Italian chicken sausage, penne pasta, and fresh broccoli because it was all I had and it turned out great. Because I used fresh broccoli I simmered the sauce an extra two minutes just to be sure it would be cooked all the way through. Nice hot meal perfect for throwing together after work.

Creamy Zucchini with Linguine

I made a few changes to this recipe and next time I will make a few more. I added some finely chopped onion to brown along with the zucchini and used 2% milk instead of whole milk. Next time I will use 1/2 as much olive oil. I also added chopped ham because my husband refuses to eat a meatless dinner! Overall it was good, just a few tweaks needed.
