About this Cook
Cooking is my passion, I love to cook for family and friends. I'm always asked to prepare dishes for special occasions and have privatly catered a couple weddings including my own. I am opening a restaurant/cafe within the next year and looking forward to it!
My favorite things to cook
I would call my style somewhere between down home and gourmet - comfort chic. I like to add updated twists to old recipes. I love to eat hearty soups in the winter and fresh veggies in the summer. My favorite bowl of food is chili mac!

My grandmother was an awesome baker!
My cooking triumphs
I can make pretty much anything. I think the biggest triumph is that I'm not afraid in the kitchen, I try new recipes all the time!
My cooking tragedies
None really to report - if I make something and it doesn't come out right, I write it down and try to improve it next time.

Orzo and Wild Rice Salad
This salad was yummy! I made a couple of changes...only used red peppers and roasted them. Also used fresh corn on the cob and roasted it also. Next time I would use yellow raisins for just a little more sweetness...great recipe.

Chicken Enchiladas II
These are the best enchiladas - I use cream of chicken soup, I think it blends better with the taste of the chiles.

Authentic Thousand Island Dressing
My husband loves Thousand Island on salad and hambugers so I decided to make this for him to enjoy while I was away. I agree that you should at least make it one day before you plan to serve it. I also added 2 TBSP of tomato paste to give a little extra color and taste. I love it! So far I've had it on a reuben, hamburger, ham sandwich and the best was on a chef salad! OOH it was so good! I'll never buy a bottled version again!
