Chef John's Italian Meatballs

These meatballs are delicious! I have been lazy recently and have been buying meatballs made a a little local grocery store. I decided to try these and will not be going back! I mixed them up on Sunday and then baked them tonight after work while the pasta cooked and I put salad onto plate. They really are that fast. And man, do they taste good! Thanks, Chef John, I'll buy a big package of meat next time and make a big batch so I can have my own meatballs in the freezer for quick weeknight meals.

Lemon Basil Grilled Chicken

Simply, quick and delicious. What more could you ask? Oh, right - also a hit with the kids! Next time I'll add a bit more salt but it's much better for a recipe to err on the side of caution. It's easy to add a bit after cooking but if the marinade was over salted, you'd be sunk. Looking at the chicken I was afraid this marinade would stick to the grill but I didn't have any problem with that. I did use Mazola (R) corn oil on a paper towel to oil the grate. I usually have used olive oil and I think the Mazola worked better so I'll use that from now on. Easy chicken, potato salad and some fresh green beans. That's mid-June at its best in upstate New York. Thanks Mazola for a great dinner and for your sponsorship of Allrecipes.com.

Pressure Cooker Chicken with Duck Sauce

This couldn't be easier or more delicious. I have a little 8 year old who doesn't bother to eat unless something really, really appeals to her. Getting enough nutritious food into her is an on-going challenge.Tonight she had finished her serving of chicken before I could sit down to start to eat! She has already had seconds and asked if there is more because she might want some before bed! It's a real hit with all four of us and I know I'll make it again and again. I did use the submitter's suggestions from her review and put all the sauce ingredients in before bringing it to pressure. Thanks, DEBMCE4, you have given us an easy, economical new family favorite!

Broiled and Slow-Roasted Butterflied Leg of Lamb With Cumin and Garlic

This is just fabulous! I am going to try this paste on other proteins. I will try it on chicken maybe using some rosemary. Be careful not to overcook your lamb. I got the last butterflied leg and it was smaller than this recipe specified. So do check the temp after 30 minutes and stop it at 140 deg. This helped to make our Easter dinner a huge success. Family's Favorite Mini Meat Loaves

These were a huge hit with my family. They bake quickly so they'd be great for a weeknight dinner. I could mix them up and refrigerate them and then pop them in the oven when we get home. I'm going to freeze the leftovers but I am betting more will make it into my lunch bag than make it to the dinner table! They'll heat up nicely in my Lunch Crock. Thanks, Paula. This is definitely a keeper!

Just Like Wendy's® Chili

This is easy and very good. The seasoning isn't exactly like Wendy's using the McCormick (R) Mild Seasoning Mix but duplicating a seasoning would be nearly impossible so I can't fault tjy99 for that. It is a bit more spicy even using mild Rotel and mild seasoning mix so if you are cooking for little ones, you might want to add just one packet of the seasoning and taste for spiciness before adding more. Thank you, tjy99. You've saved me money because i do like Wendy's chili and now I have several containers in my freezer for the next craving.

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

This recipe is just fabulous. The first time I tried it just as I got ready to light the grill the sky suddenly opened with a total deluge so I had to broil it. It was great. But I did a redo tonight cooking ir on my Weber grill and it is spectacular! The best part is that it is so simple. I want to try it yet again using some wood chips to smoke it a bit. It would be a great choice if you want to impress a date. Watch for t bones to go on sale if money is an issue. You owe it to yourself and your family to try this recipe.

Very Chocolate Ice Cream

WOW! I am tempted to skip dinner and just dive in to this ice cream. I just finished making it in my new ice cream maker and it is fabulous! Be sure to use the best possible ingredients for the best product. I used Ghirardelli cocoa which is Dutch processed. I hadn't really planned ahead and the only semisweet chocolate I had was Hershey's mini chips and I did use three ounces as recommended by Naples. I also used very good vanilla extract. I poured the mixture through a sieve before chilling. I didn't have any problem with getting it to freeze. I suspect that those who did made one of three mistakes: Be sure to cook your mixture enough. It should be thick like chocolate pudding while it's cooking; Be sure to cool your mixture thoroughly. I left a stainless soup spoon in which conducts the heat out and makes it chill faster; Finally, you do have to make sure, if you use an ice cream maker with a frozen insert or bowl, that your insert or bowl is thoroughly frozen. I added miniature peanut butter cups cut in half at the end for chocolate peanut butter cup ice cream. I can tell from just tasting this as I put it into a container and into the freezer that this will be some of the best ice cream I have ever eaten (and, believe me, I have eaten more than my share of ice cream!). My waistline will suffer but my taste buds thank you WendyWR!

Cheesy Chicken and Yellow Rice

This was OK but the green pepper was too prominent for my taste. I think the Adobo tastes similar so the combination made that flavor take over the dish. If I make it again I would add garlic and probably use half a green pepper. I love cheddar cheese but I am not sure the cheese added much except fat and calories. I will taste it before adding it next time to see if it's really needed. That having been said, it was quick and easy and my kids liked it. You could use Bird's Eye Recipe Ready onion and green pepper combination to make it even quicker.

Thai Cucumber Salad

I decided to pick up something for lunch from a food co-op in Albany. While they made a sandwich I looked at the salad bar. We were in the midst of a long July heat wave and this cold cucumber salad looked really refreshing so I tried it and instantly loved it. I wrote the ingredients down that were printed on the label and then came to AllRecipes to find the recipe. This is really close except theirs didn't have jalapenos but it did have curry powder. I chose to use both, just a pinch of curry powder, and it's really, really good. So cold, crisp and refreshing! Make it ahead so it's really cold.

Vanilla Ice Cream V

This recipe is good but my thought is that if you are going to make homemade ice cream, it's worth the calories to make it as creamy as possible. I prefer a custard base and this isn't health food as written. So the difference in fat and calories using a a heavier custard recipe is worth it to get the texture and flavor that a custard base affords. Still, I have a very good friend who doesn't like a custard base vanilla ice cream so she would love this recipe.

HERDEZ® Roasted Pasilla Chicken Stew

This is just delicious and so easy, too. If, like me, stew is sometimes too thick and almost gummy for you, you will like this recipe. Before putting over the rice, it is almost soup-like unless you really cook it down for a long time. But soldier on and put it over the rice and it is perfect! The level of spice in the Herdez (R) Roasted Pasilla Chile Mexican Cooking sauce is perfect. Spicy enough to taste but not overpowering so the flavor of the other ingredients come through on their own. You can always, like this recipe does, add more chilies and other seasonings to adjust the heat to your own taste. Since most packages of corn tortillas contain more than the 4 called for in this recipe, cut the remaining ones in strips or triangles and bake until crisp to add as toppings. Thank you Jennifer for a great recipe and thank you Herdez for a really great line of cooking sauces. I will surely be using them in the future!

French Short Pastry

I have made many, many pie crusts from scratch including making and rolling as many as 75 in a row when working at a restaurant bakery. This is indeed a classic pastry recipe and it works beautifully! I made two crusts using a food processor and blind baked them. They are about to be filled with Lemon Meringue III. I can tell from handling to pastry and seeing them come from the oven that these will be wonderful crusts. Be sure not to overwork the dough and use water either from the fridge or use water with ice cubes strained out. Stop processing before it totally comes together. Turn it onto a lightly floured surface and fold together just a few times until it forms a ball. Wrap in plastic and put it into the freezer for 20-30 minutes. Then roll it out. If it shrinks at all as you roll it, put it back into the freezer immediately or before filling. This will prevent gluten from forming and will yield a tender, flaky crust. You can also freeze the crust tightly wrapped either before or after rolling it and forming the crust in the pan. Sorry, I already filled the crusts; I'll take a picture next time.

Rhubarb Strawberry Crunch

I made this last night. Since some other reviewers mentioned issues with the crunchy topping, I used the topping from Apple Crisp II (times 1.5%) since I know that one works and I love it. This is delicious! It didn't come out of the oven until after my kids were in bed but when I was putting some into a container this morning to bring to work with me, I gave my 8 year old a taste and her eyes just about popped out of her head. Darn it, I guess I will have to share with them. I must plant some rhubarb next spring so we can enjoy this often. Thank you, Michelle. My waistline may not thank you but my taste buds surely do!

Dumplings

This recipe is easy and delicious. It's a very quick way to go from run-of-the-mill to home cooked happiness. Use these dumplings in soups and stews or with leftover meat or poultry with gravy and vegetables. I had thawed a turkey breast that was left from a roasted turkey. I added the gravy and frozen peas and carrots, warmed that while I mixed up these dumplings and in half an hour I had a delicious, filling and nutritious dinner on the table. I needed to add a little extra milk but flour varies from day to day so use your own judgement. You can't go wrong with these delicious little puffs.

Yummy Honey Chicken Kabobs

This recipe is really, really good. My little girls are sort of picky and they love it. I grilled it tonight for our Memorial Day dinner. I made it last week but used the marinade as a sauce while cooking a whole chicken in a pressure cooker. It was good that way, too. Don't pass this one by - you'll really like it!

Moist Chocolate Muffins

These muffins are wonderful! When I got ready to make these I discovered that I didn't have the yogurt I thought I did so I used sour cream. Of course the better quality your ingredients, the better your product will be. I used Ghirardelli cocoa powder which is very deep flavored. I also added some Heath bits (Skor candy bar bits for the Canadians)in the batter and dark chocolate chips on top. Purely decadent!

Four-Cheese Italian with Garlic Basil Sauce

Just OK. I had high hopes for this recipe. I love both garlic and basil but this was really boring. My eight year old ate it but even she said "the sauce needed something". Maybe some Parmesan would kick it up a notch. I am annoyed that the cooking instructions aren't on the plastic wrapper. I made a half recipe using just one of the individually wrapped sausages but the instructions aren't on the plastic sleeve. If I freeze the second piece am I really supposed to save the cardboard label for the cooking instructions?

Pineapple Casserole Dessert

I thought the cheddar cheese seemed out of place but it's perfect. Added the perfect salty counterpoint to an otherwise sweet dish. I think I'd cut back a bit on sugar next time. I served it as a side to a ham dinner but even as a dessert, it was sweet. I think I might take it to a covered dish supper as something different that people would like. Good one, sal.
