Off We Go!
About this Cook
A few years ago I had the opportunity to go to culinary school and loved every minute of it. So after nearly 20 years working as a paralegal, I took the plunge and changed careers. I was the baker at a "corporate dining" facility feeding the construction workers who are building a microchip manufacturing plant. I earned much less but I loved every minute of it - even though those minutes started at 5 AM! Now I am back to work as a paralegal albeit only part-time but I have also taken custody of two little angels who were in a violent and abusive home. I also volunteer by cooking at a small local hospice. I wish I could foster a new career for myself and others as a "Food Therapist". My efforts will not cure these people but I have found that I can provide enjoyment and the boost that a meal can bring. At the same time, the enjoyment I get is at least equal to their enjoyment of my efforts.
My favorite things to cook
I love to cook anything but baking is my passion.
My favorite family cooking traditions
Holiday meals with ALL the extras. Too much food for anyone to eat everything. I can't wait to pass the holiday traditions on to my granddaughters who are already Grandma's best helpers!
My cooking triumphs
I love the fact that even though our mother was a good cook and my five sisters are all good cooks, everytime I bring somethng new to family get-togethers, I am always asked to bring it again!
My cooking tragedies
My mother did a lot of cooking without recipes so I thought that's just what you did. One time when I was about 12, I was home alone and decided to make a pie. The crust was really not edible. Decades later, I still remember that pie!

Chef John's Italian Meatballs
These meatballs are delicious! I have been lazy recently and have been buying meatballs made a a little local grocery store. I decided to try these and will not be going back! I mixed them up on Sunday and then baked them tonight after work while the pasta cooked and I put salad onto plate. They really are that fast. And man, do they taste good! Thanks, Chef John, I'll buy a big package of meat next time and make a big batch so I can have my own meatballs in the freezer for quick weeknight meals.

Lemon Basil Grilled Chicken
Simply, quick and delicious. What more could you ask? Oh, right - also a hit with the kids! Next time I'll add a bit more salt but it's much better for a recipe to err on the side of caution. It's easy to add a bit after cooking but if the marinade was over salted, you'd be sunk. Looking at the chicken I was afraid this marinade would stick to the grill but I didn't have any problem with that. I did use Mazola (R) corn oil on a paper towel to oil the grate. I usually have used olive oil and I think the Mazola worked better so I'll use that from now on. Easy chicken, potato salad and some fresh green beans. That's mid-June at its best in upstate New York. Thanks Mazola for a great dinner and for your sponsorship of Allrecipes.com.

Pressure Cooker Chicken with Duck Sauce
This couldn't be easier or more delicious. I have a little 8 year old who doesn't bother to eat unless something really, really appeals to her. Getting enough nutritious food into her is an on-going challenge.Tonight she had finished her serving of chicken before I could sit down to start to eat! She has already had seconds and asked if there is more because she might want some before bed! It's a real hit with all four of us and I know I'll make it again and again. I did use the submitter's suggestions from her review and put all the sauce ingredients in before bringing it to pressure. Thanks, DEBMCE4, you have given us an easy, economical new family favorite!
