Carolina Style Low Carb Barbecue Sauce

This is great for a low carb option. I did find it a bit spicy in a mouth puckering kind of way, but it it very tasty.

Pumpkin Soup

This was pretty good. I let mine reduce a bit, as is I found it a bit too thin for my taste. Using pureed pumpkin I found the blender not necessary. A tip I use to get "roasted" flavour out of canned pureed pumpkin is to spray a 9x9 glass dish with Pam, then put the puree in it and pop it in the oven for about 20 minutes until the edges get as browned and bubbly as you like, then throw it in the soup. Yes it's an extra step but it takes nothing and you can do other things while its baking. Scrape all the little browned bits in, it really makes a difference. Canned pumpkin is still an excellent product, and much easier to handle.

Italian Dressing Mix

Garlic Prime Rib

Thank you this was great! We like ours a bit more done so I did just that. The marinade, however, was amazing. I wouldn't have thought to put thyme on it but it was perfect.

Meatball Nirvana

Yes this is a great meatball recipe. Just do it. I had no parm but they were delicious. I am sure they would be great with half pork as well. There is something about making great meatballs that always impresses people :)

Best Toffee Ever - Super Easy

My first time making anything like this - it was awesome! Everyone was impressed. I read many many reviews and followed the directions. My butter did separate a bit but it didn't affect the outcome at all. When I poured the toffee onto my pan, the oil ran off to the side and got left behind when it cooled and I picked it up to break it apart. Also, I had no thermometer but after about 20 minutes I dripped a bit into cold water and then fished it out with a spoon and ate it, it was crunchy and melted in my mouth. Doesn't even stick to your teeth, just melts. So easy!

Barley Bake

I can't wait to make this for a pot luck. I made it more economical by using slivered almonds like someone suggested. The almonds were a fraction of the price of pine nuts but gave that great bite. I also used chicken stock and more mushrooms. I baked it for a while uncovered but found it dried up too quickly so I added a bit more stock and finished cooking it covered with foil. This was delicious and different!

Creamy Spinach

I think even non- spinach lovers would enjoy this. Mine was very creamy and I used fresh spinach. I just added as much as the pan would handle and folded it until it wilted. I made everything in the same large frying pan - no need to remove the bacon and onions. I used less butter and 1% milk. Did not have nutmeg, and added some shredded pepperjack instead of parm. It was delicous.

Kiki's Borracho (Drunken) Beans

This was really good, something different. I followed the recipe but did not have beer. It is very filling and healthy! I keep making it but have to remember to tone down the jalapenos just a little for me. Delicious with or without cilantro but makes it a totally different dish. Thank you!

Blueberry Crisp II

I used Plums because I had a ton of them and i didnt like any plum recipes... I too was afraid of the mayo and used half butter half mayo. The tang of the mayo is SO good with the fruit I am sorry I didn't use the whole amount even though every rating said it was good. Lesson learned to trust the ratings! :)
