Slow Cooker Italian Beef for Sandwiches

LOVED this - with a few tweaks. I used chicken broth instead of water, and used a little over half of the meat that the recipe calls for. I think if I had used a whole 5 pound roast, it would not have been enough liquid. I also added some dehydrated bell peppers about halfway through (I didn't have any fresh on hand), and added some Italian seasoning. I did cut out the salt, since the broth had some salt, too. It turned out really well, and I would definitely make it again, with these changes :D

Irish Cream Chocolate Cheesecake

I made this for my husband's dad's birthday. He said his family LOVED it (I missed the party), but I wasn't a huge fan. I guess maybe it's because I'm more used to the texture of an unbaked cheesecake - I never realized there was such a difference between baked & unbaked. It seemed too dense, really heavy, super rich, which I didn't love, but apparently that's how baked cheesecakes are supposed to be (my husband tells me). So he would have given it 5 stars, and I would have given it 3, so I averaged it out to 4. I also did chocolate graham crackers instead of chocolate cookies for the crust as a few reviewers had recommended, and you couldn't tell the difference, and I used reduced fat cream cheese & sour cream. The flavor of it was good, it was just the richness/density that I didn't like.

Lemon Shortbread Cookies

These didn't turn out as I had expected - pretty disappointing, actually. The first problem is that the recipe's serving size is way off, as a few other reviewers have mentioned. I got twelve two inch cookies. I think this recipe would be good as a starting point, but it's definitely not quite right. There is far too much butter compared to other ingredients and not enough flavoring elements; the cookies ended up tasting like butter with a touch of lemon. If I were to do this over again, I would probably add lemon juice and maybe more lemon zest, maybe even a little more salt to bring out the sweetness. In addition, when I mixed the flour in, I was left with a pile of crumbs rather than dough, and I had to work the crumbs by hand for several minutes until it was even able to be rolled out. I wonder if the cookies would benefit from the addition of extra liquid, again that could be where some lemon juice might improve the recipe.

Spicy Refrigerator Dill Pickles

This recipe was far too sweet for my preference. Some of that may have been my own fault, because I used a little over a quarter cup of Splenda instead of a half cup of sugar to cut down on the calories. Although Splenda is as good as sugar in most recipes (and you use half as much), it may have been the reason these turned out so super sweet - I don't know. Regardless, next time I'll be trying them without the sugar added at all.

Vanilla Crepes

I added a little extra vanilla, and next time I'll probably add more still, because I love vanilla. These were great, though. We had them in the morning with some apple filling I made, and then later in the day, my fiance used the few remaining to make some almost burrito-like things with egg & salsa (I think?), and those were good, too :)

Lemon Cranberry Muffins

These were great. I used splenda baking sugar, just to cut the calories, and they turned out great :) I also used more than a cup of cranberries, because I had extra & didn't want to toss them. My in-laws loved them :)

Polish Chicken and Dumplings

For the broth, I used this recipe with a few changes to suit our personal taste (I wanted a whole big pot of soup, so I had to change some things). That being said, the dumplings were AMAZING!! My fiance did NOT want me to make this, because he never liked his family's recipe for chicken & dumplings. But when he tried these, he changed his mind. I love how heavy & filling they are, that's the best kind of dumplings. They're savory, flavorful, and perfect. :)

Sugar Cookies

I didn't have shortening, so I used "I Can't Believe It's Not Butter" baking sticks instead. Following another reviewer's advice, I only used 3/4 c total of butter. Other than that, I followed it to the letter...and the results were AMAZING. I took out the cookies after the 10 minutes and tried one, and it was good, but I really wanted them to be crispy (it was my fault because I did not make them thin enough), so I kept putting them in for another few minutes until they were as crispy & brown as I wanted. I think I ended up baking them for around 15-18 minutes total. My fiance loved them, and I had packed up a container of them for our neighbor, because he had done an unexpected favor for us... but I didn't end up seeing him that afternoon, and by the next day we decided we were keepin' them all for ourselves! Sorry neighbor! :)
