Spicy Bean Salsa

I rarely rate something 5 stars but this was so good! I did add cilantro and one avocado. I used green onion instead of a regular onion. It really helps to refrigerate overnight so the flavors meld together. Everyone loved it and asked for the recipe!

Health Nut Blueberry Muffins

I used all "all-purpose" flour and substituted 1/4 cup brown sugar for the 3/4 cup white sugar. I also used 1/4 cup ground flaxseed in place of the wheat germ. I replaced the oil with apple sauce. Tasty and healthy muffin for under 200 calories.

Twice-Baked Mashed Potatoes

I used the recipe for Day Before Mashed Potatoes as the base. I omitted the onion and green pepper and added green onions. I also added 1/3 cup milk to thin out the potatoes as they were a bit dry for my taste. Instead of topping with cheese I cooked then topped with chives before serving.

Basil Tomato Soup

Delicious! I followed the recipe exactly. I used store brand crushed tomatoes and low sodium chicken broth. This soup will definitely be a staple in my house!

Southwestern Quinoa Salad

FANTASTIC! I followed the recipe for the most part, except I omitted the bell pepper. The adobo seasoning (I made my own) really adds flavor. I dont see the point in toasting the quinoa so I just cooked it the "regular" way. I used lemon juice instead of lime juice because that is what I had. I served it warm/room temp.

Peanut Butter Noodles

These are soooooo good! I didnt have chopped peanuts so I used 4 tablespoons of chunky peanut butter instead. I also left out the chile paste. I will definitely make this again. I think it would go great with chicken.

Awesome Sausage, Apple and Cranberry Stuffing

This stuffing is awesome. I cooked it in a baking dish instead of in a turkey. I used sourdough bread, hot pork sausage, added about 2 cups of chicken stock for moisture, used fresh herbs and omitted the liver. Deeeee-lish!

Barbecued Beef

Oh this was really good. I used chuck roast and followed the recipe exactly. The sauces is really tasty!. I cooked for 10 hours on low (overnight) and then removed the meat and shredded it. I poured the sauce in a bowl and refrigerated it so I could skim off the fat. I then heated the sauce in a pan to thicken it and served it over the beef on hamburger buns. REALLY GOOD!!

Chocolate Pretzel Rings

I made these as another reviewer suggested.....I used mini twists and put a milk dud on top. I warmed them in the oven at 275 for 3 minutes. When I took them out I pressed a half a pecan on top. These are so good and so quick to make!

Korean Marinade

This marinade is to die for....I marinated tri tip for 48 hours after slicing it in 1/4" thin pieces. I left out the flour and sesame seeds.

Supreme Strawberry Topping

I made this to top a cheesecake and it was delicious. I used a sugar substitute to lower the calories. I cut the strawberries into quarters and put them in the sauce pan with the vanilla and sugar substitute. Once the "sugar" melted i used a potato masher to make it saucy but still leaving some nice chucks of strawberries. Delish!!!!

Mini Cheesecakes III

I loved the idea of individual servings like this but I wanted to lower the calories so I made some changes. I doubled the crust. I used low fat honey graham crackers (4 sheets that I smashed in a plastic bag, made 2/3 cup) plus an extra TBSP of margarine. Instead of sugar I used sugar substitute. I also used egg substitute in place of the egg, and fat free cream cheese. I greased five 1-cup ramekins, baked the crust for 5 minutes then filled them with the cream cheese mixture and baked for 25 more minutes in a water bath. With the changes the total calorie count was 119, and the portion size was perfect. I rated it 5 stars but I have not tasted it yet (wishful thinking I guess) because its cooling but as soon as I do I will post how it turned out! *******UPDATE*****Ok so this tastes good but it is NOT the real thing :) I topped it with a strawberry sauce to make it even yummier!

Blue Cheese Potato Salad

Oh yummy! I used multi-colored potatoes to enhance the look. I cut the oil in half and used white balsamic vinegar. I added the cheese to the hot potatoes so it melted a bit. When I tried this dish warm it was out of this world. I plan on serving it tomorrow at room temp. Hopefully its as tasty!

Playgroup Granola Bars

Oh my goodness, these are sinfully delicious. I used whole wheat flour instead of all-purpose, only 6TBS honey and only 1/2C brown sugar. I used 1/2C dried cranberries (no raisins) and diced up some dried apricots. I topped it all with slivered raw almonds. I baked for 28 minutes. The only bummer is the portion size is tiny considering the calorie content, but very healthy!

Peanut Butter Cup Cookies

Oh my gravy!!! These are sooooo delicious!! The first batch I put the peanut butter cup immediately into the dough when I removed the pan from the oven, then I put the pan in the frig to make the cupes easier to remove from the pan. The second batch i waited about 5 minutes after removing the pan from the oven before I put the peanut butter cup in the dough, then I removed the cups immediately on to a cooling rack. I like the second way better because its faster.
