Caramel Apple Pork Chops

I baked the chops and they came out very bland, and the sauce didnt thicken up. It was like water. The apples were tasty but thats not enough for me to make this again.

Chewy Peanut Butter Chocolate Chip Cookies

These are quite tasty. I substituted honey for the corn syrup and butterscotch chips for the chocolate. I dropped them by large spoonfuls on the cookie sheet. After 12 minutes of baking my cookies were quite dark, and they did spread, so space them apart enough. I reduced the baking time to 10 minutes on next batch and they came out great. I ended up with about 40 cookies.

Chicken Tetrazzini for a Crowd

This was good but I did make a couple changes. Instead of cheddar cheese I used grated parmesean (chedder didnt sound very good in this recipe). I also added frozen peas right before baking. I do think this dish needs a bit more zing to it but Im not sure how to accomplish that at this point. I will probably make again, as this is an easy recipe and great for taking in my lunch to work.

Slow-Cooker Chicken Tortilla Soup

This was really good and really easy. I took other reviewers advice and put in three frozen chicken breasts at the beginning and shredded them right before serving. I also used all chicken broth and no water. I added a can of drained and rinsed black beans for more fiber and deliciousness. I served it with sour cream, avocado, tortilla chips and shredded cheese.

Mound Bars

These are very good. Be sure to grease the pan or they will stick badly. I used others advice and sprinkled the coconut over the crust then pour the milk on top. This made it so easy. I melted the chocolate in the microwave with 1 TBSP canola oil and it poured easily, and gave it a glossy look. I dont think it tasted like a mounds bar, because mounds dont have a crust, but they were still yummy!

The Best Lemon Bars

I halved the recipe and made it in a 8x8 pan. I used 1/2 cup lemon/lime juice combo. Everything tasted really good but the topping was too thin compared to the crust. I will try doubling the topping next time. I was going to take these to work for a BBQ but ended up making something else.

Yukon Gold Mashed Potatoes with Roasted Shallots

These were good. They are on the sweeter side due to the shallots. They were a bit more time consuming due to roasting the shallots. I will probably stay with sour cream and chive mashed potatoes. It was fun to try something new though.

Braised Balsamic Chicken

Wow this really surprised me. Im not a huge tomato fan but I love balsamic so I gave it a whirl. I used the pre-spiced diced tomatoes and thickened up the sauce a bit at the end with some corn starch. If you do this, be sure to combine the corn starch with some of the hot liquid BEFORE adding it to the pan or you will just get a clumpy mess. Very tasty and I will definitely make it again.

Creme Brulee French Toast

I was really looking forward to eating this. From the reviews I was expecting the brown sugar on the bottom to come out thick like the center of a cinnabon. No such luck, it just melted into a watery syrup. I used orange extract since I didnt have the liquor. I cut down the egg by one and it was still too eggy. I had scrambled eggs on the bottom! Overall the taste was good so I may attempt this again with more modifications.

Sour Cream and Chive Mashed Potatoes

These were good, but nothing special. My BF said they were "awesome" so Im compromising with 4 stars. I used fat free half and half instead of milk and light sour cream. I couldnt find chives so I used green onions. Easy and fast so I will probably make again. Oh and I used a ricer to get the potatoes creamy before I mixed in the other ingredients.

Playgroup Granola Bars

Oh my goodness, these are sinfully delicious. I used whole wheat flour instead of all-purpose, only 6TBS honey and only 1/2C brown sugar. I used 1/2C dried cranberries (no raisins) and diced up some dried apricots. I topped it all with slivered raw almonds. I baked for 28 minutes. The only bummer is the portion size is tiny considering the calorie content, but very healthy!

Quinoa Pilaf with Shredded Chicken

This dish was ok, but I dont think I will make it again. It was a little bland and boring for me. I didnt have italian seasoning so I used poultry seasoning as someone recommended. I also eliminate the carrots and added mushrooms, since that is what I had. I rinsed the quinoa prior to cooking but Im not sure what difference that made, if any.

Rosemary Ranch Chicken Kabobs

These were pretty good, but not as good as the recipe sounds. I used full fat Ranch dressing since the low fat kind is not good at all. The ranch taste just wasnt there though. Maybe next time I will use the dry ranch dressing mix and sprinke on the chicken instead.

Marinated Scallops Wrapped in Bacon

I thought these were just OK, but my guests really liked them. I used dry wild caught scallops. I marinated them for about 12 hours. I used a small piece of bacon on top instead of wrapping them completely. I omitted the brown sugar on top. I thought they were a bit too sweet, but everyone else thought they were delicious!

Curried Coconut Chicken

This was pretty good, and I made it as the recipe states. The sauce was too watery so I had to add cornstarch to thicken it up. The chicken tasted a bit bland, I wish it had more of the curry taste to it. Maybe next time I will cut the chicken into smaller bites. I served it over white rice with a side of edamame.
