Beth's Spicy Oatmeal Raisin Cookies

These tasted delicious! I followed the recipe for the most part. I did substitute allspice for the cloves. The first batch I made small tablespoon size balls and baked for 9 minutes at 350degrees. They were nowhere near done so I let the go for aonther 2 minutes. They came out flat and see-through! The next batch I made very large tablespoon size balls and baked for 11 minutes at 375 degrees. For some reason this kept them from flattening out so much. Both batches tasted great but the second batch looked a lot more like a cookie rather than a paper doily!

Pesto Quinoa

Yummy! I cut the recipe in half and followed it exactly. I used cherry tomatoes because thats what I had. My pesto was reduced fat. Delish!

Honey Lemon Cookies

Super yummy. I added a full 2 cups of flour and 1 tsp lemon extract. I cooked them for 12 minutes on a silpat. They came out soft and delicious. I got 23 cookies. Do not skip the glaze! This makes the cookie. Otherwise there is not much of a lemon flavor.

Brownie Biscotti

These taste out of this world. I followed the ingredients exactly. This only made one loaf tho. I cooked it on a silpat and had no sticking problems. I cooked it for 20 minutes but I think it should have been longer. When I tried to cut it after cooling for 10 minutes it was still too moist and some fell apart. Maybe I should have cooled it longer too. I then put it back in the oven and cooked it another 60 minutes at 250. So good, I just need to master the technique!

Baked Chicken Nuggets

These werent too bad. The coating ended up a bit dry eventhough I sprayed the pieces with PAM... which I guess is to be expected when baking a bread crumb coating. I would flatten the breasts next time so the pieces are not so thick. I will try this again sometime.

Chicken and Black Bean Casserole

Yum! I used diced tomatoes instead of stewed and canned black beans instead of dry. I also added 1/2 frozen corn, salt and minced garlic! I had to cook this for an hour so the rice would soften, prob my fault since I cooked it without a lid the first 20 minutes. *****UPDATE*****When I made this again I just cooked it all on the stove for 35-40 minutes, until the rice was cooked. I had to stir ocassionally so the rice would not stick to the bottom of the pan. No heating up the oven and only ONE pan to clean!

Spanish Beef and Rice

This is simple yet tasty. Instead of the spices I substituted a packet of taco seasoning. I also added a can of diced tomatoes. I had to cook this for twice as long as the reciped stated, so the rice was not crunchy.

Chantal's New York Cheesecake

Yum, this is 4.5 stars! I made some minor changes. I left out the flour. I doubled the crust and added cinnamon and nutmeg to the mixture. After beating the cream cheese and sugar, I did all the rest of the mixing by hand (wooden spoon). I cooked the cheesecake in a water bath. I used a slow-cooker bag to put the cheesecake pan in so the water wouldnt seep into the cheesecake. I cooked it for an hour then turned off the oven and let is sit inside for 2 hours. NO CRACKING! But the edges got a little brown which was disappointing. It tasted delicious anyways!

A Good Easy Garlic Chicken

The name is fitting. It is good and easy. I cut my breasts into strips before cooking so I would get more flavor throughout the chicken. I then put some pesto and sun dried tomatoes in with the chicken and tossed to heat through.

Muffin Frittatas

Yum, these are tasty and easy. I didnt have milk so I used buttermilk powder and water. In my frittata I put canadian bacon, feta and mozzarella. They were done in 20 minutes. I sprayed my muffin tin with Pam and and they popped right out. I only got 10 muffins out of it. Two muffins are only 147 calories!

Slow Cooker Chicken Taco Soup

This is so good! Instead of raw chicken breasts I bought a pre-cooked whole roasted chicken and removed the meat from the bones. I added the chicken at the end just so it could heat up. I also added a T of chili powder and a couple tsp of ground cumin. I substituted kidney beans for the chili beans and chicken stock for the beer. Served it with shredded cheddar, sour cream and crushed tortilla chips.******UPDATE*****If you are using the entire roasted chicken then double the recipe or else there is WAY too much meat. I just used half the roasted chicken and froze the other half for later.

Chocolate Pretzel Rings

I made these as another reviewer suggested.....I used mini twists and put a milk dud on top. I warmed them in the oven at 275 for 3 minutes. When I took them out I pressed a half a pecan on top. These are so good and so quick to make!

Brooke's Best Bombshell Brownies

I followed the recipe exactly. I cooked the brownies in a ceraminc 9x13 pan. After 28 minutes the edges were done and the toothpick came out pretty clean (considering the chocolated chips). I took them out and let them cool. The edges were done but the center was undercooked slightly (had to toss those out). Next time, if there is a next time, I will cook for about 5 minutes longer. They tasted good though.

Spicy Bean Salsa

I rarely rate something 5 stars but this was so good! I did add cilantro and one avocado. I used green onion instead of a regular onion. It really helps to refrigerate overnight so the flavors meld together. Everyone loved it and asked for the recipe!

Pumpkin Gingerbread

This was really good and it got good reviews from my co-workers. I used unsweetened apple sauce instead of oil and only 2 1/2 cups of sugar. I didnt have ginger so I used pumpkin pie spice(doubled the amount) and eliminated all the other spices. Baked at 325 for 1 hr and 15 min. Perfect!

Sugar Coated Pecans

I followed the recipe exactly. These just didnt taste like I had hoped. They were not "glazed" enough or "sugary" enough. Wont make these again but I am still looking for a great glazed pecan recipe!

Caramel Apple Pork Chops

Chewy Peanut Butter Chocolate Chip Cookies

These are quite tasty. I substituted honey for the corn syrup and butterscotch chips for the chocolate. I dropped them by large spoonfuls on the cookie sheet. After 12 minutes of baking my cookies were quite dark, and they did spread, so space them apart enough. I reduced the baking time to 10 minutes on next batch and they came out great. I ended up with about 40 cookies.
