Quick and Easy Green Chile Chicken Enchilada Casserole

Really good and really easy. I did not char the tortillas. Instead I took others advise and dipped them in the enchilada sauce before layering. I also mixed the chicken and sour cream together to make it easier to spread.

Raspberry Cream Cheese Coffee Cake

Oh yum! The only thing I changed was substituting vanilla extract for the almond since I didnt have any. I used a 9x9 pan since I wanted to cut it into easy to eat bites for work. This was really good, but mine didnt look colorful, since the crumble was the only thing you could see. Maybe next time I will drizzle some chocolate or jam on top.

Kitchen Sink Meatloaf

Good meatloaf. Instead of ketchup, I used Heintz Chili Sauce for some kick and I omitted the cheese. Everything else was the same.

Overnight Cinnamon Rolls I

I have never made cinnamon rolls before so I was a bit nervous. In fact, I left out the butter from the dough by accident! The dough was very sticky and I used about a cup more flour than called for. It was easy to roll out and I added chopped pecans to the filling. I used rapid rise yeast so I did not have to do the first 1-hour rise. I put the rolls in a glass baking dish, covered with saran wrap, adn put in the frig. In the morning, I put the rolls in a cold oven and heated it to 375 degrees. Because of this, it took 50 minutes to cook. The outside rolls browned quicker than the inside ones so I had to cover with aluminum foil after about 20 minutes. I took them to work and everyone raved about them! Next time I may try with a cream cheese frosting instead of the glaze.

Buttery Soft Pretzels

I cheated and used Trader Joes pizza dough instead of making it. I must have done something wrong with the baking soda solution because my pretzels didnt brown up. They tasted good though.

Health Nut Blueberry Muffins

I used all "all-purpose" flour and substituted 1/4 cup brown sugar for the 3/4 cup white sugar. I also used 1/4 cup ground flaxseed in place of the wheat germ. I replaced the oil with apple sauce. Tasty and healthy muffin for under 200 calories.

Southwestern Quinoa Salad

FANTASTIC! I followed the recipe for the most part, except I omitted the bell pepper. The adobo seasoning (I made my own) really adds flavor. I dont see the point in toasting the quinoa so I just cooked it the "regular" way. I used lemon juice instead of lime juice because that is what I had. I served it warm/room temp.

Slow Cooker Italian Chicken Alfredo

This was very good and simple to make. I used fat-free Cream of Mushroom soup instead of Cream of Chicken. I cooked the chicken in the slow cooker for about 6 hours. I removed it, shredded it and added it back into the slow cooker after adding the light cream cheese and soup. I dont think cooking the chicken in the italian dressing mix added anything so I will omit it next time. Served over 1/2 cup of penne pasta. Satisfying meal for around 300 calories.

Chipotle Shrimp Tacos

I was a bit nervous about using chipotle peppers since I dont like very spicy foods, but these were very good. I cut the recipe in half and used frozen cooked medium shrimp and only one pepper. I also used packaged bacon bits. In addition, I made chipotle mayo to smear on the tortillas before adding the shrimp mixture. Avocado would have put this over the top, but I didnt have any....next time!

White Cheese Chicken Lasagna

Very tasty. I cut the recipe in half. I cooked my chicken breasts in a low cooker with banana peppers and onionsoup mix the day before and then shredded it. I used fat-free ricotta and mozzarella cheese. I also reduced the amount of spinach. Will make again!

Homemade Black Bean Veggie Burgers

I made the burgers as directed. The only change I made was to rinse the beans and squeeze the water out of the pepper and onion. The burgers were quite tasty but a bit dry. I had no problem with them staying together. However, I dont think these would hold up well on a grill. Maybe next time I wont squeeze the water out of the veggies. ***UPDATE*** I made these again but I did not squeeze the water out of the veggies and they were much better-not dry at all. I baked at 400 for 25 minutes.

Whole Grain Banana Muffins

I made some modifications to suit my cooking style. I used 1/2 cup oat bran and 1/2 cup ground flax. I also used banana cream pie fat free yogurt in place of plain. I omitted the raisins and added an extra banana. These would also be good with chocolate chips instead of raisins. Yum yum.....

Mediterranean Salmon

This was easy to make but it lacked flavor. I made slits in the salmon so the marinade would penetrate better. I cut way back on the oil and just drizzled it, the balsamic and seasonings over the salmon. I let it marinate for about 10 minutes then baked it for 18 minutes at 400 degrees.

Ten Minute Szechuan Chicken

Very good...fast and easy. I lightly pounded the chicken breasts before cubing. I didnt have green onions so I left them out. I only used 3 TBSP soy sauce and added 1 TBSP cooking sherry. Instead of white vinegar I used seasoned rice wine vinegar. Served over white rice.
