Beef Nacho Casserole

Holy moly this was good! I browned the meat with some diced onions. Instead of chili powder I used a packet of taco seasoning. I also substituted 1/2 cup of sour cream for the "creamy dressing." I added some sliced black olives, since I had an opened can. This recipe is very versile. You can add kidney or black beans. I served this with sliced avocado. DELISH!!

All Day Apple Butter

I halved the recipe because my crockpot would not hold all those apples. I followed the recipe using MacIntosh apples and all the sugar called for (it's very sweet so you can reduce if you want less-sweet). After cooking on high for an hour, I used a stick blender to puree the apples. After cooking for 10 hours on low, I removed the lid for one hour and got the perfect consistency. I used the saucer test (put a tsp of butter on saucer, wait a few minutes, if no liquid forms around the butter, its good to go!)

Classic Dinner Rolls

Success! Be sure to use RAPID RISE yeast. If you use active dry yeast you need to proof it before adding to the dry ingredients. I brushed with melted butter and sprinkled on salt before baking. They are so good right from the oven!

Indian Tandoori Chicken

I used boneless, skinless thighs. They turned out very moist but the taste was bland. With all the spices used, I had hoped there would be more flavor. I did omit the food coloring and add turmeric and paprika to give it the orange color.

Orange Glazed Chicken Wings

This was so fast and easy to make. It tasted great also. I used thighs cut into large chunks. I didnt have marmalade so I used mango butter. I put the thighs in a baking dish and tossed with the sauce. I cooked for 45 minutes at 350 degrees.

Aunt Anne's Coffee Cake

Whoa this is so good! I followed the recipe for the batter, except I baked it in a 9x9 pan for a thicker cake. For the topping, I doubled it and used half white and half brown sugar. I baked the cake at 325 for 10 minutes, then sprinkled the topping on ( I only ended up using about 3/4 of what I made, I froze the remainder). I baked for another 15 minutes then bumped the temp to 350 for another 20 minutes. Turned out perfectly moist and the topping had that nice crunchiness to it.

Mango Muffins

My co-workers raved about these! I used 1/2 cup applesauce and only 1/4 cup oil. I used 1 tsp baking soda and only 1 tsp baking powder. I reduced the sugar to 1/2 cup. I omitted the raisins and used almonds instead of walnuts. I had frozen diced mango so I thawed it and used that instead of fresh. Next time I will add shredded coconut to give it a more tropical taste.

Seafood Enchiladas

Very tasty. I made some modifications to fit what I had in my kitchen. Omitted the onion. I used can crab and shrimp instead of fresh. I had gruyere and mozzarella cheese so I used that instead of colby. I combined the shrimp, crab and cheese in a bowl. I heated CORN tortillas in the microwave to make them pliable. I filled each tortilla (I used 9) and rolled them up. I used a 7x11 greased glass dish. For the sauce, I melted the butter in a sauce pan then added HEAVY WHIPPING CREAM. Once heated, I removed from the heat and let cool for a few minutes. I then stirred in fat-free sour cream. I had some leftover filling so I sprinkled it over the enchiladas. I poured the sauce over the enchiladas and baked for 30 minutes. I will say that the sauce probably was not enough because the tortillas dried out a bit on top. Next time I will double it as some other reviewers suggested.

This was really good and healthy. I browned 4% fat ground beef then added the spices (I sub'd dried oregano, thyme and parsley for the savory) and some garlic. I put the beef in a bowl and added the potatoes and one diced eggplant to the pan with some stock. I cooked the potatoes and eggplant until tender. I added the beef mixture back into the pan with the potatoes and eggplant, and added a diced tomato and tomato sauce. I heated through then put in in an 8x10 glass dish that I sprayed with Pam. I cooked for 20 minutes at 325 then added the fat free yogurt/egg mixture on top and cooked until set, about 30 more minutes.

Carrot Cake III

Delicious! I used 1 cup white sugar and 1 cup brown sugar, and added more cinnamon and vanilla extract (about 1 tsp more each). I omitted the pecans from the frosting. Everything else was as written. I shredded my own carrots using the large size of a cheese grater, and it took about 8 medium sized carrots. I baked for 45 minutes and it was perfect.

Balsamic Chicken

Quick and easy. I marinated the chicken overnight. I didnt reduce the marinade and I regret it. What did reduce after cooking the chicken was delicious! Next time I will definitely do it.

Salmon and Spinach Fettuccine

Super delicious. I used only 3 TBSP butter and non-fat milk instead of full-fat. I substituted spaghetti squash for the pasta and gruyere/swiss blend for the parm. I didnt have fresh spinach so I added 2 cups chopped frozen. I couldnt find fresh oregano so I used fresh cilantro. Very rich and filling, yum! Around 330 calories...
