About this Cook
Happy wife and mom of 2 boys. Our family lives on a large cattle ranch in eastern Colorado. I work outside the home as an office manager for a construction company, but my first love is my family. I dream of being able to be a full time at home mom. I love to cook, I just don't have the time I would like to make those full-spread-down-home-comfort food type meals I really wish I could make everyday for my family; the kind of meals that I remember my grandma and great grandma making. But, thanks to this site, I've found lots of EASY and TASTY recipes that take very little time!!!
My favorite things to cook
I really like to use my slow cooker and my bread machine. Thanks to working a full time job, I'm very into "convience" home-cooking. lol!
My favorite family cooking traditions
Every Sunday morning, myself, my husband and our two boys (age 11yr & 2yr) make a HUGE breakfast spread. That's when we experiment with new breakfast recipes. We always turn on music and dance and sing while whipping up a batch of whatever. Even the littlest one loves to cook!
My cooking triumphs
I don't know that I have any real "triumphs". I've been asked for my recipes by almost anyone who's eaten at my house, but I really don't make anything too different. I mostly stick to the basics: soups, stew, bread, meatloaf, roast, steaks, etc.... The closest resteraunt to us is over 40 miles away, so I have to be a good cook or we'd starve!
My cooking tragedies
The only tragedy I can actually think of is not being able to cook chicken. My husband is a true blue cattle rancher/cowboy and just has a FIT about eating chicken. He says the only good things that ever came from a chicken are the egg and chicken fried steak... I've cooked chicken exactly 2 times in almost 8 years... Me- I say that's a tragedy because I see SO many great chicken recipes on this site and I'd love to try them!

Chickpea and Tomato Soup
Ad written, this soup is edible but BORING!!! But, it is a FABULOUS base recipe... so much potential in this soup! I like to use chicken stock (or chicken broth) instead of water, add shredded/roasted chicken or even kielbasa, add different beans, some more seasonings (especially garlic.) And, I do cook this in the crock on low (stirring occasionally) for at least 6-8 hrs to get a full blending of flavors. Worth 'playing' with this recipe to get the flavors you want!

Amish White Bread
SUPER easy, SUPER yummy, NO FAIL recipe!!! Perfect rolls... and, with a family full of people that can't have ANY dairy, this is AWESOME!!!!!! Works with wheat flour, white flour, or a combo of the two... I usually do 1/2 wheat and 1/2 white. (Although, depending on the humidity of the day, you may need to adjust the flour amounts. I have used from 4-7 cups flour depending.) THANK YOU!!!!!!

Dilly Bread
Hands down my fave bread!!! I always have it on hand, make it at least once a week because it's the only bread we make sandwiches on! I don't bake in a round roll, I actually make 2 loafs out of this recipe. I also don't add the salt to the top of the bread after it's cooked.... it's just too much salt for my taste. I DO add 2tsp (or more) of DILL WEED in addition to the dill seed (but, my family REALLY likes the dill flavor... LOL!) I also use about 1 TBSP of the dried onion flakes.
