Enchiladas

I add chili powder in with the beef, and a few cloves of garlic with the onion. I also use the red enchilada sauce from this site (and I don't put the tortillas in any oil, no need). Delicious!

Lime Chicken Soft Tacos

I love this recipe! I used cilantro instead of oregano and also added a couple tablespoons of tequila in when cooking the chicken (along with a whole fresh squeezed lime). Also added xtra garlic. I topped the tacos with cilantro as well (instead of lettuce), and made a batch of fresh guacamole to put in the tacos and also serve with chips on the side.

Lasagna Stuffed Shells

These were good! I will cut back on the amount of tomato paste next time and substitute sauce - it was a little too thick. I also added in more seasonings into the tomato sauce and a few cloves of chopped garlic in wtih the onions.

Shrimp Scampi V

Great recipe, with a few changes. I omit the parmesan, and put in a little less wine (maybe 1/2 - 3/4 cu). I also add paprika for some spiciness and green onions when cooking the shrimp and garlic. I serve it all over fettucine noodles.

Szechwan Shrimp

LOVED this dish! I doubled the sauce which was the perfect amount, and also added in snow peas right at the end (just to warm them). I also added twice the amount of red pepper flakes which was a tad too spicey, next time I'll add a bit less :) Also, added a few drops of sesame oil at the end. I served it all over white rice - delicious!

Seven Layer Taco Dip
