Enchiladas
I add chili powder in with the beef, and a few cloves of garlic with the onion. I also use the red enchilada sauce from this site (and I don't put the tortillas in any oil, no need). Delicious!

Lime Chicken Soft Tacos
I love this recipe! I used cilantro instead of oregano and also added a couple tablespoons of tequila in when cooking the chicken (along with a whole fresh squeezed lime). Also added xtra garlic. I topped the tacos with cilantro as well (instead of lettuce), and made a batch of fresh guacamole to put in the tacos and also serve with chips on the side.

Lasagna Stuffed Shells
These were good! I will cut back on the amount of tomato paste next time and substitute sauce - it was a little too thick. I also added in more seasonings into the tomato sauce and a few cloves of chopped garlic in wtih the onions.
