Jollof Rice

Reviewed: Nov. 3, 2008
Very good dish! It ended up being a sort of thick stew, which was great on a cold, rainy day. I doubled the rice (the listed amount was really not enough) and used red rice for a slightly healthier meal. Definitely a keeper!

Bobotie

Reviewed: Nov. 4, 2008
Very tasty! I used a lot of the suggestions other reviewers made, such as doubling the curry powder and eggs for the custard top. I left out the salt and sugar and used multigrain bread to make it slightly healthier, and used lamb for a more traditional foundation. I served it with the recommended yellow rice (turmeric, cinnamon and raisins,) which was also very good. It wasn't very filling (I had two slices and 1/4 cup of rice,) so it definitely needs side dishes to round out the meal.

Egusi Soup

Reviewed: Nov. 5, 2008
Very good! I lightened the soup up a little (less oil and meat) and it made for a great, spicy soup. Would definitely make it again!

Yogurt-Marinated Salmon Fillets (Dahi Machhali Masaledar)

Reviewed: Nov. 10, 2008
Very tasty! I advise watching it carefully if you have a powerful broiler - five minutes a side was enough to blacken both sides.

Indian Chicken Curry II

Reviewed: Nov. 12, 2008
Great curry! I made it with gobi aloo (a potato and cauliflower dish,) but next time I'll serve it on rice to soak up the plentiful sauce. Highly recommended!

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Reviewed: Nov. 12, 2008
Very good! I added the recommended can of stewed tomatoes for liquid and it turned out great. Didn't have quite as much flavor as I thought it would, but my family loved it!

Chutney Chicken

Reviewed: Nov. 12, 2008
Very good chicken! I cooked the chicken in a larger pan with a variety of veggies and my family loved it! We think this recipe would be great for just cooking vegetables as a vegetarian dish. I'll probably add more chutney next time - I didn't have quite enough (about 7-8 ounces) and it spread very thinly.

Authentic and Easy Shrimp Curry

Reviewed: Nov. 13, 2008
Great curry! Definitely easy to make and went very well with vegetable masala. Thanks for the note about curry leaves not being the same as curry powder!

Vegetable Masala

Reviewed: Nov. 13, 2008
Very good! I agree with the other reviewers that the vegetables needed more cooking. I skipped straight to step 3 and they took quite awhile to cook. I served it with a tomato curry dish, so it didn't need more liquid for sauce.

Chole Saag

Reviewed: Nov. 17, 2008
Great saag! I did have to cook it a lot longer than the recipe said, as it ended up having more liquid than my family is used to. After cooking it down, however, it was very tasty!

Easy Shepherd's Pie with Garlic Romano Potatoes

Reviewed: Nov. 20, 2008
Very tasty! I added more garlic and used a light Celtic cheddar, and it turned out great! My family thought it could have used slightly more potatoes, so I might add a potato or two next time to balance the meat and potatoes a little better.

Irish Chicken and Dumplings

Reviewed: Nov. 20, 2008
Very good! I put the potatoes and carrots in after an hour of cooking so they would have an hour to cook, which they really needed (a half hour isn't enough if you want to get really soft potatoes.) I also replaced the celery with broccoli because my family doesn't like celery, though I think it overpowered the chicken flavor. My family really liked it!

Irish Lamb Stew

Reviewed: Dec. 6, 2008
Very good! I used the recommended Guinness (plain, not extra stout) and it turned out great. My family wasn't as keen on the lamb flavor , so next time I'll try it with beef.

Thai Coconut Chicken

Reviewed: Jan. 22, 2009
A tasty meal! I had to spice it up a lot (tripled the curry powder, added some cayenne and fish sauce) but the end result was well-liked by my family.

Chicken Massaman Curry

Reviewed: Jan. 27, 2009
Fabulous! I didn't have the tamarind, and I had to use lemon juice instead of limes, but it still turned out great. I added peas and used red curry paste for color, though 2 tablespoon of the red curry paste made it way too spicy for my family. Also, I cooked it almost an hour longer than the recipe stated and the potatoes were still crunchy.

Vietnamese Chicken and Long-Grain Rice Congee

Reviewed: Jan. 29, 2009
I ran into some problems with this recipe and ended up with two different meals, neither of which was quite right! I'm a health nut and used brown rice instead of white (probably my first mistake,) so even after doubling the rice and cooking it for an hour all I had was a brothy soup and a tiny bit of rice. Then I added more rice (about 1.5 cups) and left it to cook. The new rice soaked up all the water and made it very thick! Both 'recipes' were very good, though, so the second time I'll get it right!
