Caprese on a Stick

I make these all the time for parties. People rave over them and they are so easy. For more color, you can use the gold/yellow tomatoes or the heirloom tomatoes, too. I usually use grape tomatoes and leave them whole.

I typically use 1 part buttermilk to 2 parts heavy cream. Leave it on the counter for 24 hrs. Then place in fridge.

Donut Muffins

Very fast and easy. Taste pretty good. I took them to ladies' bible study and everyone said "oh look donut holes!" I think the key ingredient is definitely the nutmeg. I wouldn't leave it out!

Pumpkin Cookies V

It's a good idea to make the frosting first, so that it has time to cool. I use a disher to portion out the cookies and they stay perfectly round. They are so light and delicious! Kind of like a little pumpkin cake. The frosting is great. I also use it on other desserts, like pound cake.

Sweet Potato Rolls

These rolls were very good, but they didn't have a very strong taste of sweet potato. Everyone who had one loved them. I did not use canned sweet potato, I used sweet potatoes that I cooked in the microwave.

No-Knead Artisan Style Bread

Easy to make. Great recipe for beginners. The crust is great! I will double the recipe next time. I made the amount called for in the dutch oven and the bread came out more of a disc shape than the boule I was hoping for.

Microwave Lemon Curd

OMG! I can't believe it. I love this.I would have never guess it would be as good as the non-microwave version. I am a convert! For those of you who complained about egg bits, you can strain the mixture while still hot through a fine sieve and this will take out any lumps or bits.

Spiced Parsnip Soup

First time I tried parsnips. Really good! The recipe is good as is, but to make it more to our taste, I used only 1 tsp of curry powder and added a dash of ginger. To cut calories, I used fat free half & half in place of the cream & light butter in place of the butter.

Sometimes I'm too lazy/busy to spread the butter on at the end so I add more to the dough itself and then shape into rolls... AWESOME recipe. I use it very often!
