Brie Cheese Appetizer

This was a big hit. I used raspberry preserves and threw a handful of sliced almonds on top for the last few minutes it was baking. I will definitely make this again.

Slow Cooker Chicken Creole

This was a great recipe. After reading the other reviews, I added a can of tomato sauce, more garlic and more celery. Next time I will add more mushrooms as well. It is a very tasty dish, but not very spicy. Next time I will add some cayenne.

Tasty BBQ Corn on the Cob

This is the tastiest corn I have ever eaten. I made the butter/spice mixture the night before to save some time. I boiled the corn and brushed the mixture on. People were raving about it all night.

Macaroni and Cheese with Veggie Bacon

This was my first time making mac and cheese from scratch. This recipe was easy to follow and it was very popular. I have had several more requests for the dish and the recipe. I used turkey bacon because I don't eat pork. I will make this again and again.

Apple-Rosemary Blue Cheese Bites

I modified this slightly. I didn't have rosemary, so I used thyme. I chopped one apple and added it to the rest of the filling. I sealed the corners of the crescent so that it formed a little ball. These were fast, very tasty and not too heavy. The strongest flavor is the blue cheese, so I would recommend this to blue cheese lovers only.

Party Pinwheels

After reading the reviews, I only used half a package of the ranch dressing mix. These were amazing. I used different flavors of tortillas so that my platter was filled with 3 different colors. Everyone raved about them and asked for the recipe. It was fast and easy and a great hit at parties.

Butternut Squash Pizzas with Rosemary

This pizza was light, but so tasty. I didn't use the cornmeal and I used the whole wheat pizza crust from Trader Joe's. I used Asiago cheese and it turned out perfect.

Fiesta Chicken with Black Bean Salsa

I loved this chicken and I served it on top of cilantro-lime rice. I didn't use any of the optional garnish to help keep the fat amount low. I also poked holes in the chicken and marinated it overnight. I will make this over and over again.

Cilantro-Lime Rice

After reading the other reviews I made a few modifications. I only used half of a vegetable bullion cube and I tripled the lime juice and cilantro. It turned out tangy and flavorful. I will make this again.

Lemony Quinoa

This is one of the best quinoa recipes I have ever seen. I used slivered almonds instead of pine nuts because the almonds were half the price of the pine nuts. I also used lime juice instead of lemon because that is what I had handy. I added a teaspoon of curry powder after reading other reviews. I didn't add any salt (I prefer food less salty). This was tasty, refreshing with just the right amount of crunch. This will make a great potluck dish.

Delicious Black Bean Burritos

These are the best black bean burritos I have ever had. I fiddled with the proportions a little to make enough for the whole week. Instead of jalapenos, I used a small can of diced green chiles. I also doubled the cliantro because I love the flavor it adds.
