"June Cleaver without the pearls." Enjoy collecting cookbooks from my favorite era--the 1950s. Learned to cook by helping my mom--everything from macaroni and cheese to cappelletti (which took us all day and we never made again). My mom introduced me to ethnic foods and never put a disappointing meal on the table. To honor her precious memory I took her name as my user name: Katycooks1.
My favorite things to cook
I look for recipes with ingredients I have on hand. Really lean towards "from scratch" cooking and, as I get older, for more simple dishes.
My favorite family cooking traditions
We always had a corned beef for St. Patrick's day and a turkey for Thanksgiving. These days the corned beef may end up in sandwiches and only a turkey breast prepared--but I still have everything to go with it (oyster stuffing an absolute must). And because we had such fun eating fondue, I prepare that and bake a cake on December 24th, my mom's birthday.
My cooking triumphs
The greatest joy of my life was trying out a new recipe and having my husband, Rich, love it and request it again.
My cooking tragedies
As a newleywed I invited my parents over for Round Steak in Rich Gravy. After 8 hours in the Crockpot I lifted the lid-it looked exactly like it did when I put it in because I'd forgotten to plug the Crockpot in! My husband teased me about that for 30 years.

Roast Chicken Pita Pockets
I was eager to try this recipe but only had a 10-ounce can of chicken in the house. Cut the ingredient portions in half and added to the chicken. Warmed two pitas, lined them with lettuce and added the filling. They were delicious!

Lemon Apricot Cake
I can hardly wait for the next potluck so I can bring this cake. It looked beautiful and was absolutely delicious! Could only find guava nectar but was not disappointed at all with the taste. The only problem I encountered was with the glaze--had to increase the amount of lemon juice to create a liquid. Because it makes such a large cake, cut into serving sizes, wrapped in plastic wrap and stored in freezer. Whenever I wanted a piece of cake I microwaved it for 20 seconds and it tasted freshly baked.

Fiesta Turkey Tavern
I sampled the mixture just before adding the remaining mustard and jalapenos. Didn't seem at all "hot". Next time I will use 1/4 teaspoon cayenne and 1/4 teaspoon chili powder. However, found the amount of jalapenos too hot--too overpowering, so will cut down to 1/8 cup. Tried the mixture as a burger, in pitas and tortillas. Thought the tortillas were by far the tastiest.
