Bread Pudding II
My family LOVES this recipe! So simple and so YUMMY! I never thought I'd like bread pudding because I always assumed all bread pudding was made with raisins and I honestly don't care for raisins! Now, after I have tried this recipe and substituted dried cranberries for the raisins this is one of my favorite 'go to' desserts! I have made this several times and always double it and make it in a 9x13 pan. I have tried it using 12 slices and using 14 slices and our family prefers the consistency and texture of it with 12 slices. I also use 6 eggs instead of the called for 8 eggs for a dbl. batch, like many reviews have suggested. I usually sprinkle some pecan pieces on top with the cranberries and serve this with the vanilla sauce recipe also from this site! It doesn't get any better than this!

Best Chocolate Chip Cookies
These truly are the best chocolate chip cookies ever! I have made these several times with excellent results every time. They truly are crispy on the outside and chewy on the inside and pretty to look at too. I do use 1 1/4 c. brown sugar to 3/4 white sugar, but that's the only change! I always sift my flour before mixing it in and add it by the spoonful in my KitchenAid stand mixer. It's a thick dough but nothing that my mixer can't handle. My oven takes longer to bake everything so I leave them in for 15 minutes and they are "perfect"! Also my husband prefers his cookies 'crispy' ( I would almost consider them 'burnt' myself because I like my cookies soft and chewy!) and if I leave them in the oven an extra 5 minutes they come out to his liking too! It's a win/win all around! I will never use my Mom's choc. chip cookie recipe again! I use the medium scooper from pampered chef and end up with 45-46 cookies every time...not 24!

Ham Tetrazzini
This is a great recipe! Super easy and my picky 4 year old even ate it! I did have to modify the recipe slightly because of what I did and didn't have on hand but I like this recipe because it's a good 'basic' recipe that you can modify to your own family's tastes. I had to use cream of celery soup because I didn't have cream of mushroom on hand. I also added a sm. can of mushrooms and some steamed peas. I did 1 c. instead of 1/2 c. of shredded co-jack (we live in MN and you can never have enough cheese in any recipe :0)!) I added 1 tsp. of minced garlic in with the sauteed onions as well and used milk instead of water to make the sauce more creamy, as many other reviewers suggested. Also, didn't have fresh parsley so used dried parsley. Overall a good basic recipe that I can modify to what I have on hand. I think it would be good with leftover turkey or chicken too!
