Easy Chicken Tetrazzini

Reviewed: Dec. 1, 2008
I read some of the reviews before making this dish and they were helpful. I also tried to make it a half recipe as I read that it would be quite large. I used a 12 oz. bag of egg noddles, 2 cut up chicken breasts seasoned with onion, garlic, parsley, basil and oregano, 1 can of cream of chicken, 1 1/2 C. of chicken broth, 1 large Tbsp of butter and I put in a quarter cup of shredded Mexican blend cheese in the sauce while still hot. I added the same seasonings to the sauce mix before boiling as well. I also mixed about a quarter cup of breadcrumbs with another quarter cup of the same cheese (I like cheese!) that made a crunchy top. This will make an appearance on our menu from now on! Thank you for all the helpful hints! Next time I am thinking of adding the peas or broccoli some of you mentioned!

Peppermint Snowball Cookies

Reviewed: Dec. 7, 2008
These cookies are pretty good - it seems like for the time you put in you should get more out of them. I will be making another batch because one is not going to be enough. I got 30 cookies out of one batch. I used candy canes that I mashed and I put in a teaspoon of peppermint along with the vanilla. Thanks for sharing these holiday goodies!

Green Beans with Bread Crumbs

Reviewed: Dec. 7, 2008
I made this recipe with asparagus. My husband LOVED it. I thought it was ok - I am not a big Parmesan person and my husband is. Maybe that was the difference. I will make this again so thanks for sharing!

Buckeyes I

I am giving this 5 stars because everyone is raving about them! My husband said it nails reese's recipe. I don't eat peanut butter, but everyone who does sure loves these! Thanks for the great recipe - by the way this made around 60 buckeyes!

Spinach-Cheese Swirls

Reviewed: Dec. 19, 2008
These are pretty good. However, they are hard to make, especially if you haven't worked with pastry puff before. They are also best when warm.

Coconut Macaroons German Style

Reviewed: Dec. 20, 2008
These cookies are awesome! They didn't take long and I wasn't sure that I had done them right as they were sort of sticky on the inside. I worried that they may not be done. I read some of the reviews though and it looks like it's just a personal choice. Mine came out with a crunchy outside and chewy inside - they are super good!

Pignoli Cookies I

Reviewed: Dec. 20, 2008
I'm sorry, I didn't care for these at all. I love almond flavor and pine nuts so I thought this would be a good fit. They are sticky and hard and hurt our teeth! I used parchment paper and they stuck like mad - I lost half of the cookies on the paper! They were also much more time consuming than I had anticipated.

Chicken Supreme III

Reviewed: Dec. 28, 2008
I have been looking for this recipe for a few years now - I had lost it! I have made something similar with the chicken in the past and it was one of my favorite meals. This time however, I made it with leftover turkey pieces from Christmas dinner. I used Pepperidge Farm herb stuffing, 3 C. and 1 C. of chicken broth. I added 3 Tbsp of butter melted with celery & onion. I forgot the second layer of turkey and poured the cream of chicken/water mixture on top of the stuffing and then topped with Mexican blend shredded cheese - it was delicious!

Butternut and Acorn Squash Soup

Reviewed: Dec. 28, 2008
I am going to try this recipe again, the first time the mishap was my own fault. I have never used a butternut squash and cut it in half the wrong direction - so it didn't get baked thoroughly and I ended up tossing some of it...probably should have thrown out more because it made for a strange consistency. However, the others who tried it, loved it and the flavor was really good.

Cocktail Meatballs

Reviewed: Dec. 28, 2008
Very, very good! They remind me of something an older lady I know that she makes with ketchup and she calls them "sweetish meatballs." Everyone thought I had used some kind of BBQ sauce in these - they were quickly eaten up - and I doubled the recipe!

These are excellent! I am not normally a fan of brussel sprouts, but these are delicious! Even my husband who claimed he didn't like them enjoyed - thank you for a wonderful and simple recipe that we will be eating over and over again!

Chocolate Rum Cake

Reviewed: Jan. 31, 2009
My co-workers loved this! I made it for someone's birthday who requested a chocolate rum cake. I knew she liked coconut and since it was the only kind of rum I had handy, I used it in the cake and for the drizzle. Don't miss out on the topping, it totally makes the cake! I put chopped walnuts and coconut in the bottom of the baking flute before baking and also some on top after adding the drizzle - it was a smash hit and everyone is waiting for the next birthday to roll around to have some more!

I omitted the green pepper and only put in about half of a bottle of dressing. This was a huge hit at our BBQ.

Garden Veggie Pizza Squares

I topped mine with broccoli and chopped carrots. this was delicious! Everyone loved it. Next time I think I will shred the carrots instead of chop them though as they were a bit hard to keep on the pieces. Excellent recipe!

Baked Ziti III

Reviewed: Dec. 14, 2009
This is the best pasta I've ever eaten! I was a little leery of baking sour cream, but it is so delicious! The only things I changed were I made my own sauce and I only used about 45 oz of it total, a little less than the recipe called for and it was plenty. This recipe does make alot so if you are only cooking for two you will have tons of leftovers for the freezer.

Andi's Own Delightful Brunch Burritos

This was pretty good. I would have never thought of putting sprouts with eggs. I think the recipe calls for too many of them but overall, this is a tasty recipe.

Chipotle Mayo

Reviewed: Jan. 5, 2010
This is really good. It's also very hot! I added garlic and lime juice as others suggested and also put in a whole cup of mayo and it's still very hot. It's good and hope to use it on my new diet as it is low in calories when using light mayo.

Breakfast Burritos

Reviewed: Jan. 7, 2010
I did as another person said and cooked everything in one pan. First the bacon, took it out, cooked the eggs. Then I added the bacon crumbled, beans, and cheese. I also put some pureed avacado in them. They are a pretty good twist for breakfast.
