Ezekiel Bread I

I was excited to make this bread and followed the recipe exactly. Not sure what went wrong, but after over an hour in the oven, it still wasn't cooked through. When the top began to burn I finally took the loaves out and switched them to racks to cool. Both loaves were nearly uncooked in entirety and collapsed upon removal from the pans.

Easy Pie Crust

So simple! We have used this for pumpkin pie (using only half the salt) and for Quiche. We liked it so much that it has become the crust we use every time that we make Pumpkin Pie. However, I would not recommend using it for a fruit filling, it seems to work best with fillings that set.

Spelt Biscuits

I am definitely adding this one to my permanent recipe collection. Made the recipe as is, no changes, and it worked out great. I made extra and we used them the following morning for fried egg sandwiches.

Zucchini Patties

Great recipe and so quick! As another reviewer suggested I used instant potato flakes instead of flour and I really liked the potato flavor it added. Other than that I added a few of my own spices for personal preference. Will definitely make again!

Brown Sugar Meatloaf

I LOVED this meatloaf...and I don't usually like meatloaf. The sauce added a nice sweet taste and it bubbled up over the top while cooking. The smell was amazing! Used ground turkey and substituted potato flakes for the cracker crumbs (which gives you a smoother meatloaf texture). Will definitely make again.

Cuban Beans and Rice

A great base recipe. Cut back to only 2 cups liquid or you will get mushy rice. I felt it needed a little spice and added diced green chilies...just what it needed! Will definitely make again, it's so easy.

Wild Rice Waldorf

Pleasantly surprised! I didn't have sour cream on hand so I substituted plain yogurt. I thought that I would be able to leave out the sugar since the apples and pineapple are so sweet but after testing it I decided that it definitely needed the little bit of sugar. I nixed the nuts and added a little bit of cinnamon. DELISH! A nice light dish for the summer time. Will definitely make again.

Raspberry Vinaigrette

WONDERFUL! I used thawed, frozen raspberries and just threw everything in a blender (removing the raspberry seeds was an unneeded step in my mind). It took less than 5 minutes and we used it on a Mandarin Orange Spinach Salad. So simple and easy AND better than any store bought raspberry vinaigrette we've had. Will definitely use this recipe again and again.

Ham 'n' Egg Casserole

Very easy dish to make. The only change I made was using grated cheddar and just sprinkled it on top instead of melting it. I made this for Easter Monday brunch using the ham left overs from Sunday dinner. It was so nice to not have to prepare it in the morning. We served it with a spinach salad and pan fried potatoes. Everyone loved the meal!

Chocolate Cupcakes

The only change I made to this recipe was cutting it in half. I don't know what went wrong, but the cupcakes didn't hold together very well. However, the taste and texture were perfect for turning them into cake balls!

Couscous and Cucumber Salad

First, made it as is and found there was too much lemon and not enough vegetables. Second go around I made these changes: Cut lemon juice to 1/3cup and made up the difference in liquid with Olive Oil. Then I added some celery and tomatoes (would also be a great chance to use some zucchini!). The ratio of veggies to couscous was MUCH better and the lemon was a compliment instead of overpowering. I served this with grilled chicken which everyone loved but it would also go great with some grilled salmon. With the changes, it makes a good, refreshing summer dish.

Broccoli Salad Supreme

First, I LOVE this recipe. Second, I'm a little bit of a health nut and made the following changes. I used only 1 cup of mayo (and it was low fat) and substituted in a lowfat plain yogurt for the second cup. The addition of the yogurt helped with sweetness so I was able to cut back on the sugar to 1/3 cup and not notice. It is a nice, sweet salad and the grapes bring a great fresh taste. Instead of serving the bacon in the salad I served it on the side so that people still had the option. Although, even my husband preferred it without the bacon. No leftovers with this one and I will definitely make it again!

Peanut Butter KELLOGG'S® RICE KRISPIES TREATS®

I used this recipe to make a special treat for my husbands birthday (he LOVES peanut butter!). It was so easy and turned out great! I used a high quality, all natural peanut butter which has more of a peanut taste than regular brands. To add a little more to the presentation I cut the finished squares into a monkey and used various chocolate to decorate it. It looked almost too good to eat!

Oatmeal Cranberry White Chocolate Chunk Cookies

Great recipe. Didn't need to make any changes and it turned out very well. I did make the cookies a little larger and pressed down lightly before I put them in the oven. And, as always, watch your bake time. These cookies dry out very quickly if left in the oven too long.

Ratatouille Pasta

It definitely tasted good, but it tasted like a North American version of a french dish (my husband, who lived in France, gave the verdict on it). Great way to start introducing your family to different cuisine though.

Waffles I

A great basic waffle recipe. You can't go wrong. A nice recipe to have on hand when you want the "original" instead of something over the top. Just make sure you don't overbeat, or you will likely end up with flat, dense waffles.

Carrot Cake III

Good but it wasn't as good as I was expecting. The icing is the perfect proportions and I wouldn't change a thing about it. However, I found the cake to have too much sugar and it seemed to be missing something. That said, it was very moist and everyone enjoyed it. I'll use the icing recipe again, but will probably look for an alternative cake.

Really can't go wrong. An old classic that is easy to make. Soooo many ways to add your own personal touch. I like adding 1/2 Cup smooth peanut butter and drizzling the tops with melted milk chocolate.

Fluffy Peanut Butter Frosting

Great recipe, quick and easy. I used this recipe substituting Nutella instead of Peanut Butter and used it to frost a banana cake. I loved the finished texture and taste. I had made extra as I didn't know how much I would need for the cake. My husband ended up using the leftovers for a fruit dip (YUM!). I will be making this again this weekend but with Peanut Butter this time to frost a chocolate cake.
