Pat's Baked Beans

Reviewed: Nov. 3, 2008
Awesome! I made these for a BBQ last weekend with my sister and her husband and everyone loved them. I've been told that I must make these again soon and I agree, they were wonderful. I made them exactly at the directions state and the only mistake I made was I thought it looked a little soupy at the end of cooking time so I uncovered it and let it bake uncovered to reduce the liquid a little bit. Next time I won't do that, they turned out just a little too dry after I did that and we agreed they would have been even better if they had been juicier. All in all a great recipe!

Flatlander Chili

Reviewed: Nov. 4, 2008
Wonderful! I made this last night for a football game because my brother in law requested chili. I did change a few things, I used a 29oz can of tomato sauce, 2 14 oz cans of stewed tomatos and 1 10oz can of tomato puree and I sauteed the green pepper and onion before adding it to the chili. I also omitted the celery as a personal preference for my family and it was awesome!! Even my sister raved about it and had leftovers tonight. I served it with a Spoon bread which really made this top notch. Will be adding this to my recipe box for sure

Cheddar Beef Enchiladas

Reviewed: Dec. 4, 2008
A really wonderful recipe! I made this tonight for the family and it was a hit! All of the kids loved it and my oldest had 2nds, my husband said they tasted like his favorite mexican restaurants and said these are a keeper for sure. I made it exactly as written except I used a can of red enchilada sauce instead of salsa.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Dec. 6, 2008
Awesome! I made this for our monthly Bunco game and it was a hit. I omitted most of the sugar as I felt it didn't really need it. I also brushed the flour tortillas with real butter and sprinkled them with the cinnamon sugar and it worked really well. I baked them a little longer as we like them crispy. Will make this again and again

French Onion Dip From Scratch

Reviewed: Dec. 6, 2008
I've made this recipe 3 times so far and each time it's the first thing gone on the table! Here are a few things I do different. First it takes alot longer to caramelize the onions then it says, I did it low and slow for about 45 min. I used alot less mayo as I felt it overpowered a little (I used just 1/4 cup instead of half). I also upped the amount of onions to just about 2 cups and added a few dashes of worchestershire sauce. You really do have to let it sit overnight to really get the full effect but I'll never buy store dip again, its a little time consuming but VERY easy and the taste is out of this world

Peanut Butter Kiss Cookies

Reviewed: Dec. 27, 2008
I also followed the first reviews hints and used the white sugar, brown sugar and confectioners sugar. These cookies are amazing!! My kids gobbled them up and my skeptical sister enjoyed them too

Golden Sweet Cornbread

Reviewed: Jan. 5, 2009
Pretty good, my husband really enjoyed it. I made it to go along with a Chicken and Barley stew and it was a nice compliment. The only thing I did differently was I added a can of corn kernals to the mix before baking. Will definitely make this again

Brown Sugar Meatloaf

Reviewed: Aug. 14, 2010
Very good. I did add 1 clove of garlic and made the ketchup-brown sugar combo into a paste and spread it on top. The kids devoured it, I'll make it again.
