Downeast Maine Pumpkin Bread
I followed the recipe exactly this time and it is perfect! It did take a bit longer to bake. My husband LOVED it, I will definitely make it again.

Lemon Cream Pasta with Chicken
This was a pretty good recipe, it definitely needs more seasoning. I used garlic and garlic salt. Sautee'd the chicken and didn't follow the pasta recipe, although I can see where it would taste good that way. I did add a can of chicken broth to the chicken after it was cooked and let it simmer for awhile. I doubled the pasta as we have a big family and like leftovers for lunch. I added the cooked pasta to the meat and let it cook until it abosobed most of the broth. I also used 2 cups of half and half instead of the cream. I thickened it a bit with flour, but I really don't think I would have needed to, and actually in the end more half and half or milk would have made it much better as it got a bit dry. All in all, pretty good, but I will try some things different the next time as it really needed something more.

Broccoli Hamburger Casserole
Like just about everyone else, I made this recipe my own, I added the 2 cubed potatoes, which I sautee'd for a few minutes first. I mixed in a handful of jack and a handful of cheddar cheeses and then put some more on top. I seasoned the meat really well and added the slice mushrooms and chopped onion when I cooked it. I baked covered at 400 degrees for 30 minutes then uncovered for another 15, I let stand 15 minutes and it was great! My boys and I love casseroles, my husband, not so much! But he thought it was alright and will be willing to eat it again! YUMMY!
