Awesome Italian Hoagie Spread

Yummmmmy, of course we all adapt and use what we have on hand. I used assorted meats, Italian blend cheese, a touch of Dijon, a plop of sour cream, ok pay attention to this SUN DRIED TOMATOES YUMMMY. I need to put this away or I will eat it before the party. I will definitely make this again.

French Onion Dip From Scratch

I swear it seemed like every review I read said they will never buy store bought French Onion Dip again. Wow after making this " I will never buy store bought French Onion Dip again". True it takes much longer to caramlize onions and I added chives from the garden. This was a huge hit a a BBQ.

Chef John's Meatless Meatballs

I made these for my dad for Father's Day. I used the food processor to get the mushrooms and onions nice and small; glad I did. It was amazing how much this recipe actually looks like meat. I used a small ice cream scoop just like I do for meatbalIs. I only refriderated a couple of hours and i am curious how much better they would be refrigerated overnight. I must confess dad did not get the full serving of meatless-meatballs because It was so good before I even put it in the refrigerator (had to sample) and then amazing after it was cooked ( had to sample). I will make this again and turn my vegetarian friends onto it. Thanks once again Chef John.

Herbalicious Shrimp Dip

This was a hit at at recent BBQ. I use what I have on hand so I did modify the recipe. Omitted mayo, carrots and onion ( so many people are sensitive to fresh onion) used cream cheese, sweet peppers, onion powder. The fresh herbs are key to this recipe. The next morning I put some on an English muffins topped with Swiss cheese and sliced tomatoes and broiled it...yummy.

Chocolate Oatmeal Cookies

These are wonderful. I have put white chocolate chips, toffee bits, and dried cranberries in them too. I like to grind up candied pecan as a little secret ingredient .

Cheese and Bacon Potato Rounds

I took these to a family dinner and they were a hit. It was nice because they truly are a finger food.I will make them for the family and I would take these to work for lunch. I took the advice of another member and put cookie cooling racks on the cookie shett to cook them which was brillant no sticking and no turning of the potatoes. I used a cutting board which has a ruler on it to insure 1/2 in slices and I see how the right thickness is key to success. Next time I will salt them before baking.

Springtime Pasta Salad

Super good and a big hit. Fortunalty I ate some after I made it since it was completely gone by the time I made it to the luncheon. Since I had a nice cucumber and capers I tossed those in too. I will make this again.

Rosemary Ranch Chicken Kabobs

These are delicious even the kids loved them. I tasted the marinade and thought 'oh goodness that's salty' but after cooking them it wasn't to salty for us, it was just right.

Banana Cookies

I really like these they have a 'healthy' taste to them. It is a good base recipe. I followed another reviewers advice and replaced the shortening with margarine. I added all kinds of things to them; black sesame seeds, oatmeal, and chocolate chips. I will probably add different ingredients each time depending what I have on hand.

Beef Nacho Casserole

This was easy after gardening all day and I usually have browned ground beef in the freezer. I did mix a little Ranch dressing with the mayo. I told my boyfriend that it reminded me of something you would get in a school cafeteria LOL. Easy and quick enough and I always have the ingrediants on hand.
