Ranch Dressing II

I was just put on a low carb/low salt diet and this is just perfect. I traded the sour cream for buttermilk and left out the salt and FELL IN LOVE! I wanted to drink the leftovers out of the jar. :P

Taco Salad with Ranch Dressing

This was delicious. I tossed it all together in a bowl and then once it was plated I sprinkled diced avocado over the top. I used a little less cheese and salsa and I left out the black olives. Next time I will add some canned corn and perhaps some black beans.

Corn Fritters

These were excellent. They had great flavor and were fluffy and delicious. The only change I would make is to add a little bit more corn but the recipe was fantastic as was.

Four Cheese Macaroni

My changes were to double the cheese, just use one egg, and use 2 cups of half and half. I also sprinkled some seasoned breadcrumbs on top before baking. It wasn't creamy and liquidy like boxed mac n cheese but it was amazngly tasty.

This is a pretty good base recipe. I found it a bit eggy for my taste. Next time I plan on adding less egg, more vanilla, and perhaps a dash of nutmeg.

Roasted Pears with Caramel Sauce

This was *very* sweet for me, but I loved it. I made some alterations. I soaked some old (ok, dried out but I wanted to use them up) raisins in Brandy. I tossed them into the pan when I turned the pears over. I also used almonds instead of pistachios because I had a handful leftover. I'm thinking this may become a go to dessert for me for unexpected company. The sauce is basic and the variations are unlimited. Any fruit/ Nut that goes together will work in this.

Cream of Broccoli Cheese Soup II

I followed the recipe for the most part with the exception of using sharp cheddar. I did spoon out the majority of the chunks and put them through the food processor. It was thinner than I thought but when I pulled it out for leftovers today it was perfect and tasted even better than last night! Will make again!

Butter Cookies II

I quite liked these. They are not overly sweet but have a pleasant flavor. I pressed them long and some I dipped 1/2 in chocolate, some I sandwiched together with nutella in the middle, some I served plain. They are always a hit and get eaten up.

Irish Tea Cake

I think this was wonderful. The name describes it well as it's perfect to eat with my afternoon cup of tea. It's a bit sweet to eat on its own. I had no trouble with it rising, and I didn't find it dry in the least. I drizzled a design in chocolate on the serving plate and dusted a pretty design on top of the cake with powdered sugar. It looked as pretty to serve as it tastes.

The Best Rolled Sugar Cookies

I gave this 4 stars because I had the same problem lots of other people had. This dough was way too fragile to roll out. I chilled it overnight and I still couldn't roll it /use cookie cutters on it. I wound up rolling them into balls and flattening them on the cookie sheet. I had added an extra 1/2 tsp of vanilla after reading that they were bland and I thought the taste was quite pleasant.
