Creamy Pumpkin Pie

Excellent pie that is healthy enough to eat every day! I subbed acorn squash for the pumpkin and, although I will cut the nutmeg a bit next time, it was great! Nobody knew it wasn't real pumpkin and it's a good way to get rid of squash picky eaters won't touch.

Better than most chinese restaurants! I add onion salt to my chicken and have never bothered with food coloring for my sauce. The best!!!

Chicken Salad with Toasted Almonds

Delicious!!! My late stepmother used to make this and it was a family favorite. I never got the recipe from her and was excited to find that this is it! I used more grapes, doubled the water chestnuts, subbed fresh spinach for lettuce, and the next time I make it, I'll cut the amount of almonds in half.

Marie's Easy Slow Cooker Pot Roast

Easy and delicious! I've never been a fan of pot roast but I will make this one regularly. The roast was tender and tasty. I used quartered red potatoes from the garden and they didn't get too soft. I doubled the amount of potatoes and carrots in the recipe and it was perfect. The only other thing I did differently was I added two beef bullion cubes to the water. I'm not sure if it was necessary but that's what I did. The great thing about this recipe was that it, like most slow cooker recipes, was a no fuss supper. I put everything in the crockpot in the morning and it was ready for dinner. I also made gravy with some of the juices, which was a nice topping for the potatoes and beef.

Spanish Rice Bake

I added garlic, used fresh tomatoes and didn't have any Worcestershire on hand. Inexpensive to make and has all the ingredients my husband and I like to eat.

Tuna Noodle Casserole from Scratch

Simple and delicious! I only had bowtie noodles to use and left out the mushrooms as my husband despises them and it was still great. I'll be making this regularly this winter.

Blueberry Zucchini Bread

Everyone loves this bread! It is very moist and delicious. I've made it several times and the loaves disappear quickly. I made it with huckleberries instead of blueberries, added an extra cup of zucchini (you gotta get rid of the stuff somehow!) and used 1 1/2 cups of brown sugar instead of the white sugar. I've also made it without berries and it is wonderful plain zucc bread. I also use 2 regular loaf pans. This recipe is a favorite!
