Eggplant Parmesan II

Aunt Eileen's Stuffed Eggplant

Great! Our company liked it too. Followed the recipe except used dried parsley instead of fresh, monterey jack cheese instead of gruyere, and skipped the capers to save money. We'll make it again. I think it helps to dice (pulse a few times) the eggplant, onion and garlic in the food processor, and cook all together instead of cooking eggplant first for 1 minute, that's not necessary.

Blueberry Gingerbread

Really yummy...made it to share and everyone enjoyed it. I've made it once exactly as is (using frozen blueberries), and once with these substitutions: whole wheat flour instead of all-purpose, lemon juice and milk instead of buttermilk. Enjoyed both ways.

Carrots with Dried Cherries

Really good! I used frozen cherries (less sugar and cheaper than dried.) I sliced the frozen cherries into 2 or 4 pieces and added them just like the recipe says. I would make it again.

Beet Salad with Goat Cheese

Awesome! My husband and I loved this. The fresh beets were very sweet. We substituted pecans for the walnuts. Next time I'm doubling the pecan/syrup mix! Yum. We will make this again.

Penne with Asparagus and Mushrooms

This recipe was bland and needs more spice. After adding lots of salt to my plate, I enjoyed it fine, but I wouldn't be excited to make it again. My substitutions: I used 2/3 cup olive oil, whole wheat pasta, 1 cup half and half.

Spicy Sausage and Rice Casserole

Spicy and tasty. We enjoyed it. I used 16 oz regular ground sausage. I cooked 1 cup white rice in 1 can of chicken broth and then mixed it with the sauteed veggies and sausage. I then added only 1/4 tsp black pepper and 1/2 tsp cayenne pepper. Baked in oven for 30 minutes. Still a little bit liquidy from the can of tomatoes but the rice was cooked well and it was tasty. Shared half the dish with my friend and they topped it with cheese and wrapped it in tortillas.

Pumpkin Black Bean Soup

Really one of the best 5 star recipes I've made in awhile. I loved it. I only pureed 1 can of beans with 1 can of tomatoes. I then added ANOTHER can of tomatoes to the soup with the 2 leftover cans of black beans. The extra texture of beans and tomatoes was great.

Satay Chicken Pizza

Sooo good. I made the "Hot Peanut Sauce" submitted by Dee Lowman, and added some garlic salt to it. I marinaded the chicken in some of that peanut sauce for an hour before sauteeing it. I used just the green part of the onion, not the bulb. My husband and my in-laws and I all enjoyed these pizzas. I will make this again!

It's Chili by George!!

Very yummy. I doubled the beans (4 cans instead of 2) and added a tablespoon of cocoa powder. I simmered it for about 1 hour (with the lid off) and all the flavors seemed perfect together. I served it over elbow noodles and sprinkled cheddar cheese on top. I will make this again.

Spinach Tomato Tortellini

Really yummy. I will make this again. We added a little chicken but it would have been good without as well. Very filling. I used frozen spinach instead of fresh and more milk instead of heavy cream. Turned out great.

Yum. We made it for my mom's b-day. She declared it her new favorite cake. We substituted applesauce for the vegetable oil, sour cream instead of sour milk, and chopped walnuts instead of ground walnuts.

Poppy Seed Chicken

Very yummy. I followed the recipe very closely. I did cook the chicken first, then diced it, then covered with sauce and toppings to bake. Baked 25 minutes covered, 5 minutes uncovered). I used "Honey Butter" Ritz Crackers. My husband and in-laws loved it too. We ate almost the entire 6 serving pan, just the 4 of us.

Tofu and Veggies in Peanut Sauce

I really enjoyed this a lot. I plan to make it again! My husband thought it was just okay. We both like tofu and vegetarian meals on a regular basis. I tried to follow the recipe as closely as possible...I did use portobello mushrooms and natural crunchy peanut butter. I like my tofu browned and so I sauteed it by itself in the peanut oil for about 5 minutes and then added the veggies for about 4 minutes. Once I added the PB mixture, it only took 1 minute to finish. I served it with mango on the side. We tried sprinkling it with rice crispies, ritz crackers, and no topping...I like it each way. Thanks for this recipe! ********************************** If you have PICKY KIDS like mine (4 yrs and 16 mos), I'm happy to report that I scooped out some tofu from the finished dish and rolled it in rice crispy cereal and that's what I served to them. They refused to touch it at first, until I required my son to eat 2 bites before he could have something else. I suggested he pretend he really liked it...to my surprise he was a great actor. He ate his two bites with great "enthusiasm" and then my 16 month old girl proceeded to try hers and said "nummy" and ate 6 tofu/rc cubes. I was so proud.

Pork Chop Casserole II

This was a hit. I made it for my husband and my in-laws and they all really liked it. My mother-in-law is an excellent cook, by the way, so I take notice when she likes something. I followed the recipe almost exactly...my cans of cream of mushroom soup were already seasoned with roasted garlic and so I just left out the garlic powder. And I did drain the green beans...the recipe doesn't mention that part, which might be helpful for a new cook. Like another reviewer, I had never boiled pork before and it worked great. I used whole wheat rotini. All the different textures and tastes were great. Serving size above is listed as 5, I think it would serve at least 8. We had lots of leftovers. (My side dishes were honeyed carrots and kiwi fruit.) I froze some of the leftover casserole...we'll see how it does reheated. Picky little kids who don't like their foods mixed and sauced, like mine, might enjoy ingredients from this recipe set aside and kept separate for them: pasta, cheese, green beans, small pork bites, rice krispies. Then at least they are learning to eat the same foods the adults are.
