Rachel's Cream Cheese Fruit Salad
This recipe was ok. I doubled the recipe to serve at a pitch in dinner. Really you cant go wrong with the wonderful blend of fresh fruits, but here are a few of my suggestions to make it better. First, per the advice of others, I omitted the pretzels and I didnt miss them. Second, the cream cheese sauce made this dish very soupy. Too soupy for my taste. Because of this I sliced a store-bought angel food cake and served the dish as a sauce to be poured over the cake. I also feel that mixing the sauce seperately and serving it over individual cakes with the fruit would create a great variation of strawberry shortcake. In short, the ingredients were wonderful and tastey, I just didnt like it served alone in a bowl.

Caramel Chocolate Corn
I didnt love this recipe. Microwave recipes are difficult and leave a lot of guessing because they arent all created equal. I have a 1000 watt microwave and reduced each cooking time by more than a minute and the popcorn still scorched. It did, however, stay crisp. In fact, I had no trouble with my popcorn being gooey or soggy. Still, after tossing out the burned kernels, my husband really enjoyed the treat. He said it reminded him a lot of Cracker Jacks. Unfortunately I never liked that snack either.

Coconut Cream Pie
I like a recipe that works the FIRST time. I made this pie exactly as the recipe stated and it turned out perfectly. It easily filled my pie crust to the brim, set up beautifuly and tasted great. I topped it off with my own recipe for cream: 1 cup of cold heavy cream, 3 Tbs of powdered sugar, 1 large marshmallow melted and mixed in. I garnished with toasted coconut. Even the first slice looked gorgeous when I served it. I would definitely recommend this recipe!
