Chocolate Chocolate Chip Nut Muffins

Reviewed: Feb. 21, 2009
This muffin recipe is really good. It actually taste better the next day when you heat it up in the micro for 30 seconds or more depending on how hot you like your muffin. I followed the recipe the way it is plus took other reviewers suggestions such as adding 1/2 Tbsp canola oil, 1/2 Tsp. salt, 1/2 cup cocoa powder, 1/2 cup ghiradelli cocoa powder, and 1/4 cup espresso. I used espresso rather than coffee because it enhances the taste of the chocolate better. I will surely make this recipe again.

Zucchini Chocolate Orange Cake

Reviewed: Feb. 1, 2009
I didn't have zucchini but tons of banana so I decided to make this into a Banana Chocolate Orange Cake. The combination of all the ingredients came out very good. The cake was moist and delicious. This shows how versatile the recipe is. Thank you for sharing it with us. Next time will make it with zucchini (promise) and will add chocolate chips.

Salmon with Lemon and Dill

Reviewed: Jan. 28, 2009
Nice, simple and delicious. I made a few changes. I used fresh dill and fresh garlic and replaced butter with extra virgin olive oil. I also slightly brown the salmon by broiling it for 5 minutes. Will definetly make this dish again.

Pineapple Banana Bread

Reviewed: Jan. 17, 2009
Perfect timing for this recipe. I have extra bananas, pineapples, and cherries leftover from the holidays and didn't know what to do with them. I followed the recipe as suggested but used half whole wheat flour, half all-purpose flour, half of the sugar suggested (my bananas were very ripe and sweet), half applesauce and half oil, didn't use eggs (my 2 yr old son is allegic to them), added cherries in the middle, and to decrease cooking time I made it into muffins instead of bread. Even with these tweekings my muffins came-out really moist and delicious. Best of all, everyone in my family can eat it. I enjoyed making this recipe. Next time I will follow the suggestions of others like putting oatmeal or using pineapple extract. But I will also try using other fruits such as blueberry, cherry and apple. Thank you for sharing a wonderful recipe to all of us.

Ham with Honey and Brown Sugar Glaze

Reviewed: Jan. 9, 2009
This ham recipe is true a keeper. I used crushed pineapple and 1/4 cup of the pineapple juice. I think this is the reason why my glaze got thicker.

Basic Crepes

Reviewed: Jan. 9, 2009
This is a very simple and easy recipe to have for breakfast or dessert. I followed the recipe closely and just added a dash of vanilla and orange rind to make it a little bit more Frenchy. I served it with various fruit toppings, nutella, powdered sugar, and some home made whip cream. It came out very delicious. My husband, children, and in-laws enjoyed it so well we had to cook another batch. Thank you for sharing a wonderful recipe to all of us.

Awesome Roast Beef

Reviewed: Dec. 30, 2008
I served this dish for our yearly Christmas party and everyone raved on how good it was. I doubled the recipe so I can freeze the the leftover but nothing was left. I followed the recipe and the only thing I didn't do is add the cream of mushroom because my two year old is allergic to dairy, and it still came out very good. I also seared the meat before putting them in the oven. Thank you for sharing this recipe to all of us. This will definetly stay in my recipe box.

Spanish Rice II

Reviewed: Nov. 17, 2008
I tried this with brown rice and I was pretty disappointed. It wasn’t as flavorful as I thought it would be. I'll try to make this again and use the recommended rice. Maybe I’ll get a better outcome.
