Greek Chicken & Tomato Salad

So I'm on this blasted diet and while I would love to smoother this in ranch dressing and onion ring bits, I can't (sad sorrowful face). 5 stars for nutritional value and fullness factor. This will not knock your socks off, but all things given it's darn good. The chicken itself is full of flavor and insanely juicy. The Kalamata olives and Feta cheese give much needed flavor. All in all, I'm happy. But it's better in a wrap. I should know - John just made one and it's delicious!

Mini Eggplant Parmesan

One eggplant was supposed to serve 4. HA! We ate half as soon as they came out of the frying pan ... the remaining portion that we managed NOT to scarf and actually top with cheese were devoured. These puppies are delicious. Dangerously so.

Serbian Ground Beef, Veggie, and Potato Bake

Hate to be in the minority here, but we just didn't care for this at all. Made as directed except did the 3 layers as so many others suggested. Used mandolin to slice potatoes at 1/8" and some of them still weren't cooked completely thru. Did not care at all for the cinnamon & cloves in the meat (so sorry). I would like to try this again, only without the cinn/cloves and using mashed potatoes instead of sliced. My apologies, but just not for us.

Chocolate Breakfast Smoothie

I needed a pick me up so I substituted some coffee ice cubes I had in place of regular ice cubes. I also processed the oats a bit before adding milk so they'd soften a bit quicker. Lastly, I only had about half the frozen banana called for so I was short on that. Nonetheless, LOVED IT! Because I was craving a chocolate shake (grin) threw on a dollop of whipped cream and a drizzle of chocolate syrup. Yeah - I know, defeats the whole purpose of a healthy smoothie, but heck. Life's short :)

Pecorino Fry Bread with Broccoli

This was insanely delicious. Crunchy, delicately oily, salty, sweet ... YUM! I'm telling myself it's a healthier version of ye ole standard garlic bread ... yeah, that's what I'm telling myself (grin). We'll stop right there.

Fettuccine with Asparagus

Insanely incredibly unbelievably wonderful. The crunch of the asparagus was delightful against the creamy sauce and the bacon gave it just the right amount of salt. We made intending to use as a side dish with T-bones ... T-bones went virtually untouched as we gobbled this down. SO SO good! Just a note: we both agreed sliced hot Italian sausage would be a great addition to dish ... will try that next.

Asian Grilled Chicken

This wasn't bad, by any means ... but it didn't wow us, either. Made as directed, marinading chicken for a good 9 hrs. Just 'eh'. Many thanks for recipe anyway.

Wheat Crackers

I really enjoyed these. Halved recipe (using olive oil and perhaps a half tsp of Italian Seasoning). The first batch I left as made (although I did mist the top with olive oil) - took about 20-22" to fully cook. Second batch I misted, then sprinkled with kosher salt, garlic powder, and Pecorino Romano cheese. Both were great (although I have to admit we preferred the one with the cheese on top). Will def make again - my thanks so much for recipe!

Romaine with Garlic Lemon Anchovy Dressing

UPDATE: I let this sit for a couple of hours and was still of the opinion it lacked *something* ... went ahead and tossed in a few T of grated Romano and a squirt of Dijon ... let it sit another couple of hours and then served with dinner. Hubby loved. ORIGINAL: Just made and while it was super quick and easy, I'm hoping there'll be a better punch once I let it sit for a while and let the flavors meld. My only change was to use a tsp of anchovy paste as I was out of anchovies.

Roast Potatoes

These were wonderful! I made a medley of broccoli, baby carrots, and the red potatoes. As others mentioned, had to cook a little longer than 20 minutes - around 30, I believe, but that's it. Delicious!

Easy Hamburger Green Chili

Lord have mercy, this stuff is AWESOME!!!! Made primarily as directed using 12oz ground beef, 1 can mild chilies, and a few jalapenos. Used around 7 cups of chicken stock and let reduce for 25 minutes ... it's still pretty thin, but will wait and see how it thickens up tonights. Regardless, the taste is out of this world! Thanks SO much for sharing!

Super Easy Strawberry Short Cake Biscuits,-.Better then store bought!

My goodness, these were lovely! I halved recipe and came out with 6 huge biscuits. They've got the perfect amount of sugar ... just a touch comes through - perfect when smothered in berries and whipped cream. Thank you SO much, Manella! They were wonderful!

Red Skinned Potato Salad

This was good. Halved recipe, used 3 slices of bacon, white & green onions. We felt it needed a little more seasoning, so we added a little granulated garlic, some paprika, and a squirt of horseradish mustard. Husband loved the addition of bacon. Thanks so much for recipe!

Outstanding. Simply outstanding. I had to cobble this together using ingredients I had on hand, so bear with me. Halved recipe as just hubby & I, didn't have enough sour cream so I had to supplement with about 1/4 cup of plain yogurt; out of Monterey Jack so used a combo of white American and cheddar; out of chopped canned peppers, so used a few diced jalapenos I had available. Yeah, I know. But don't care. Because this was delicious. Served with BBQ pork chops, tossed green salad, and corn. Thanks SO much for recipe - we loved it!

Chipotle Beef Tostadas

This. Stuff. ROCKED! SO good! At first, I was a little worried about the spiciness of the meat/potato combo, but by the time you assemble the tostado with (in our case refried beans), lettuce, tomato, avocado, cheese, and sour cream, you don't even notice the heat ... just that lovely lovely chipolte smokiness. YYUUMMM! Who would've though potatoes would work SO well on a tostado???? Can't thank you enough for recipe! Oh - side note we also cut recipe in half and there was more than enough for 4 people.

Potato Waffles

These were different ... I haven't quite decided if I like them or not, but I made changes (after reviewing several different recipes and incorporating a bit of all of them). #1) I used a Belgium waffle maker - the finished waffle came out high and fluffy like a Belgium waffle with the texture of a Belgium waffle and the taste somewhere between a waffle with potato overtones. #2) I did add 1/2 tsp of baking powder and 1/4 tsp of baking soda ... I'm sure that contributed to the *thick waffle* texture which I've since decided I do NOT want in a waffle potato cake. I'd definitely prefer a crispy crunchy potatoey texture. So. In short, my bad. Going to retry without the leavening agents, but I'm thinking I'm probably going to have to go out and buy a regular waffle maker to get the results I'm looking for. Aside from that, this is a great way to use up leftover potatoes. Thanks so much for the recipe!

Quesadilla Jalapeno Spread

This stuff ROCKS! Doubled recipe and adjusted slightly for our family's tastes. Sub a little sour cream for some of the mayo (about a third), kept sugar at 1 tsp and cumin at 1/2 tsp. Used home canned jalapeno's pretty much just using heaping scoops directly from jar. Leaves the most delightful *tingle* on your tongue. Thanks SO much for recipe!
