Peanut Butter Kiss Cookies

Reviewed: Feb. 1, 2011
Are there better peanut butter cookie recipes? Yes-- BUT, the simplicity of this recipe is what makes it so great. You can add and change things like brown sugar, powdered sugar, flour, etc...but I love that this is a basic and EASY recipe that my five year old can help me with and I like the pure peanut butter taste of it. Very good!

Pork Chops for the Slow Cooker

Reviewed: Jan. 8, 2011
These were fantastic...I always struggle with pork chops a bit, so I love that this recipe is so easy- seems hard to screw it up! I followed others advice and used equal parts ketchup and soy sauce, a little extra garlic and a few tablespoons of honey....then thickened it up at the end with cornstarch. Yummy over rice and a side of broccolli!

Catherine's Spicy Chicken Soup

Reviewed: Jan. 3, 2011
Great recipe! Just note, this makes a LOT of soup! Plenty for my family of four and still have leftovers to freeze! I made it exactly as written and I thought it was perfect as is. I like my soup a little on the creamier side so I added more sour cream at the end and topped it with shredded cheese, crushed corn chips and sliced avocado...YUMMY!

The Best Sweet and Sour Meatballs

Reviewed: Dec. 29, 2010
I thought I was "above" this recipe...made it for my family one night when I had all the ingredients. Turned out really great-- I added ketchup as others had done, otherwise followed the recipe exactly. Great over white rice and paired with some steamed broccolli.

The Best Banana Bread

Reviewed: Nov. 21, 2010
I don't get it...I followed the recipe exactly, and it really lacks flavor...needs another 1/2 cup of banana and DEFINITELY needs some SALT...I would also recommend a little cinnamon and vanilla...maybe some nutmeg.

Scrambled Egg Muffins

Reviewed: May 24, 2010
I made this once as written, and once with what I had available and both times they came out great. My changes in the second round was to omit the green pepper and used some leftover mushrooms and potatoes...yummy! My 2 year old ate three of them!! My only complaint is the clean-up...even with using some non-stick spray, it took some hefty soaking/scrubbing to get this cleaned up!

Fantastic! I was half way through mixing everything when I realized all I had was soy milk (eww) it still turned out great! Super light batter with just the right crispiness--- Add yellow mustard and mmmmm!

Best Ever Banana Bread

Reviewed: Sep. 10, 2009
I've made a lot of banana breads but this one takes the cake! So perfectly moist with a nice chewy crust. I followed others' advice and substituted 1/2 applesauce in place of oil, used whole wheat flour, added a little vanilla and left out the nuts--- Divine!

Grilled Gorgonzola-Basil Burgers

Reviewed: May 15, 2009
This was a solid recipe- good for when you want to change things up a bit. I think I just struggled with what to top my burger with....besides red onion & tomato. Mayo? Spicy mustard? My husband and I both need a sauce on our food without ruining the intended flavor or authenticity of the dish.

Cathy's Banana Bread

Reviewed: May 14, 2009
This is 5 stars as is-- but the second time I revised with the following: Sugar- did 1/2 brown and 1/2 white. I substituted 1/2 the sour cream with 1/2 cup of vanilla yogurt--- and since I completely forgot I was out of Vanilla extract I used almond. I've also always added a bit of cinnamon and nutmeg to my breads. These changes made it so decadently rich and wonderful--- I will never make another!!!

Salisbury Steak

Reviewed: Apr. 3, 2009
I agree that the sauce wasn't so great....almost bitter tasting. I think next time I'll just make some gravy from a rioux and extra french onion soup. I also feel like the meat needs a little something more so that it doesn't just taste like a hamburger.

Puffed Cauliflower Cheese

Reviewed: Apr. 3, 2009
This was a good side dish...nothing to be excited about and it tasted a bit more like a breakfast dish then a dinner side--- very eggy but I guess one could assume that by looking at the ingredients.

I rated 5 stars because I thought it was fantastic and my kids did to--- I think you'll enjoy it if you grew up on Campbells chicken noodle soup--- tastes just like it! Great for kids, not necessarily the recipe you make to impress guests though.

Roasted Portobello Mushrooms with Blue Cheese

Reviewed: Mar. 25, 2009
This is a very nice recipe as is, but the second time I made it I like it even more by using a couple splashes of worshestire sauce instead of soy sauce...it really pairs with the "meaty" taste of this dish. I also spread on some garlic salt over the top of the mushroom before adding the cheese. Next time I will follow a few other reviews and add some sauteed red bell pepper on top. You MUST like blue cheese for this recipe....please don't rate recipes low if a food listed in the NAME of the recipe is one you don't like!!!
