Marinated Baked Pork Chops

Great marinade. Followed recipe except use 1 tbls of sesame oil instead of 2 tbls of oil. Let it marinate for an hour. Used two 1.5" inch porkchops @ 375 degrees, 15 minutes per side, basting with 2nd half of marinade after turning. Broiled for 5 minutes and let it rest for 10. Hubbie and I liked it very much and plan to make it again.

Spicy Grilled Shrimp

pretty darn good. my changes: 1) 3 cloves of garlic, 2) 1 teaspoon of salt, 3) 1 tbsp of oil, 4) juice from 1 whole lemon, 5) 1 lb of shrimp (thawed frozen uncooked), 6) added 1 teaspoon of cayenne pepper. pan-grilled shrimp over medium heat for 2 minutes per side. def would make again, especially since it is so easy and requires very little prep.

Butternut Squash Soup II

pretty darn good. my changes: 1) only 1 tablespoon butter, 2) pinch of curry powder, teaspoon of cinnamon, 3) omitted celery, carrot, and potato 4) added 1 sweet potato 5) added 3 minced garlic cloves and 1 tablespoon of minced ginger. sprinkling of chopped green onions and dollop of sour cream. so yum.

Roasted Brussels Sprouts

So friggin' good. I ended up using only 1 tablespoon of oil. Also roasted about 15 cloves garlic along side with it. Smoky, nutty outside made the flavor.

Eggplant -- Easy, Good and Tasty

really good. omitted oil and used cooking spray to grease pans. used fat free italian dressing. baked eggplant on both sides to allow for crispness before adding topping for additional 3-4 minutes. so easy and always a hit.

Cornish Game Hens with Garlic and Rosemary

so so good. pretty much made as is with noted points: 1) spray hens with cooking oil, 2) add some minced garlic underneath skin, 3) add extra clove of garlic to each cavity, 4) added a bit of broth to bottom of pan to prevent garlic from burning, 5) basted hens every 5-7 minutes. so friggin good.

Easy Arugula Salad

really really good. only changes i make are cutting the oil back to 1 tbsp and omitting the avocado. usually will add somes sliced red raw onions and maybe some sliced pears or other type of fruit for a bit of sweetness. best part of this recipe is that this is so easy to make.

Marinated Flank Steak

holy jeezers was this good. only change i made to the recipe was cutting back the oil to about 1/3 cup of olive oil. i marinated it in the fridge for 30 hours and then stuck it under the broiler for 5 minutes per side - resulting in a medium rare finish. amazing.

Chicken and Red Wine Sauce

fan-friggin-tastic. few changes i made: 1) added thin slices of onion with garlic and oil 2) used chicken drumsticks 3) halved the sugar 4) added chopped red bell pepper after brown sugar and red wine 5) omitted paprika because didn't have any on hand 6) left uncovered last 10 minutes to allow sauce to thicken 7) added mushrooms during last 5 minutes husband LOVED it and will definitely make again.
