About this Cook
I am a junior in college just trying to get graduate. Living in an apartment makes it easier to do what I love--cooking good, healthy, and yummy meals on a low budget. My boyfriend of one year is my everything and is allergic to dairy, so, everything I make is cow juice free and great tasting! When I cook for his roomates, even they don't know that it's dairy-free!!
My favorite things to cook
I love taking normal, everyday meals and making them dairy free and 100 x's better! I also LOVE trying new recipies which makes a STAPLE! With my limited income, I usually buy as close to natural or even organic as I can find and afford (especially when it comes to meats).
My cooking triumphs
Making foods that my boyfriend has never had before because of his severe milk allergy and making them my way (dairy free) and him loving it! Biggest dairy-free triumphs: cheesecake, cream cheese brownies. Even his roomates can't tell they are dairy-free!
My cooking tragedies
Misreading 2 teaspoons for 2 tablespoons. Those were some salty peanut butter cookies. :P

Easy Chicken and Rice
This recipe is a GREAT concept and a WONDERFUL guideline to follow. I hardly ever follow directions when making recipes, and I really don't want to be one of those people who list what they did differently, but I have got to commend you for this recipe! I used very health-friendly, non-dairy ingredients, even down to the packet of dry chicken soup and was VERY VERY pleased both times I have made this! Thank you for posting your idea!

Old Fashioned Onion Rings
I really enjoyed this recipe! I followed another reviewer's advice to use Tupperware to toss and coat the rings in the flour, batter, and the bread crumbs so there is less mess. Thank you so much for a wonderful recipe. I made this for my boyfriend and his roomates and it was a HIT! They said they were the best onion rings, ever. Also, since my boyfriend is severely allergic to dairy, I used ricemilk instead of the cow milk and it worked great. These were the FIRST onion rings he had ever had since most restaurants use diary in their recipies ...again, I cannot thank you enough!

I really liked this recipe! It was easy with simple ingredients. Even a poor, starving college kid could afford it! Thank you for a great meal inspiration. Leftovers are great, too!
