Truck-Stop Buttermilk Pancakes

Reviewed: Feb. 23, 2009
These pancakes are so good that I don't even use syrup, just butter and fruit preserves. Peach, apricot, boysenberry, and strawberry are all excellent!

Baked Ziti with Sausage

Reviewed: Feb. 22, 2009
Excellent recipe. Sausage makes ziti a perfect alternative to lasagna. The only change I would make is that next time I will use less pasta in order to increase the flavor of the other ingredients.

Heavenly Chocolate Mousse

Reviewed: Feb. 17, 2009
Very good. I used the chocolate I had on hand which was half bakers semisweet and half bakers german chocolate. This mousse was very good and very chocolatey. I layered with cool whip to tone it down a bit. Next time I will use all german chocolate so it won't be so strong. Also, crushed thin mints in the bottom of the serving dish is a nice addition.

Caesar Salad Supreme

Reviewed: Jan. 14, 2009
I added eggs and bacon (most salads are much better with eggs and bacon). To my croutons I also added some parmesan cheese and italian seasoning. Very good!

Taco Salad III

Reviewed: Jan. 14, 2009
Good salad. I skipped the pinto beans and avacado. Plus instead of chips I deep fried (using a tin can to shape) a few soft taco shells to make edible bowls. Yum!!

Cabbage Fat-Burning Soup

Reviewed: Jan. 13, 2009
This soup is very very good. One batch lasts a whole week. I hate green peppers so I substituted some kale instead. It was a good addition. If you start getting tired of this soup add some rice and ground beef. It makes it not so fat-burning, but much tastier.

Bermuda Spinach Salad

Reviewed: Jan. 7, 2009
I followed this recipe all except for I did not have mushrooms and I don't like celery seed. It was very good!! Instead of mixing everything together I plated it separately: first spinach, then eggs and bacon, then croutons, then dressing. I made my own croutons with italian bread, butter, parmesan cheese, and italian seasoning. The dressing is the BEST part of this recipe, with no celery seed, of course. Although another reviewer suggested using sesame seed and I think that would have been good. I will get some for next time.

Cinnamon Hazelnut Biscotti

Reviewed: Jan. 7, 2009
I followed this recipe exactly and had superior results. I tried three different biscotti recipes (Cranberry Almond and Chocolate Almond), but this one definitely was the best! I dipped some in melted bakers semi-sweet chocolate, drizzled some with melted white chocolate, and dusted some in a mixture of granulated sugar and cinnamon. They were so good!!

Grandma's Egg Custard Pie

Reviewed: Dec. 20, 2008
Very good pie although it seems more pudding and less custardy. It's so creamy and so good. Next time I will cook the milk down a little more.

Danish Kringle

Reviewed: Dec. 14, 2008
This recipe gets 5 stars for tasting good and 5 stars for fun making it. One tip is to use a pizza cutter to make the cuts. It keeps the dough from tearing. Another good tip is to pay attention when the recipe says "heavily floured surface". You will have a lot of trouble with the dough if you are too cheap with the flour. I was able to make 3 just fine but its so much easier to work with when its cold so you have to roll fast. I made one with apricot preserves and cream cheese, cooked apples and cream cheese, and vanilla custard with chocolate drizzle. All three were delish.

Chicken Cordon Bleu II

Reviewed: Dec. 14, 2008
This is a great recipe. I add extra spices to the flour: season all salt, pepper, oregano, basil, and parsley and then instead of cornstarch I just dump in the excess seasoned flour. It's the best. Very good!

Omitted the worcestershire, added some minced pimento, and added parmesan cheese to my bread crumbs. Will make again with more mayo and more parmesan.

Slow Cooker Cranberry Pork

Reviewed: Dec. 8, 2008
I didn't have a pork roast so I used 3 pork chops instead. I added 1 thinly sliced celery rib and about 1/2 t of chili powder plus the recommended garlic, salt, and pepper. The sauce was very good. It resembles the polynesian sauce you get at Chick-Fil-A. I served it with potatoes and cabbage, but with so much delicious sauce, I think it would have been much better with rice.

Excellent Crab Imperial

Reviewed: Dec. 7, 2008
Substituted minced celery for green peppers, omitted the mushrooms and doubled the shallots. I could not find gruyere cheese in the grocery store so I just used deli swiss. This was very good only next time I will use less sherry.

Peanut Butter Bars III

Reviewed: Dec. 7, 2008
This is an excellent recipe with just a few changes. First I halved the recipe except used 2 eggs and 1 cup of white sugar. I used butter instead of shortening and self-rising flour instead of regular. I also upped the cooking time to 25 minutes. These were soooo good that icing was not needed. Try this. You will like it too!

An old faithful recipe when you need a snack or just don't feel like fixing dinner. I used 2 slices of American cheese on each sandwich. Mmmmm good!
