Baked Cream Corn

Excellent easy recipe. Hubby loves creamed corn..me..not so much..too runny. This made us both happy. Hubby loved it and so did I. I omitted the celery salt, onion powder, and garlic powder because I didn't them at the time. Am sure they would make it even better. I only had 1 can of creamed corn, so I halved the recipe. Just the right amount for 2 people. Used an extra large egg and about 2 tablespoons of flour. Was delish! Will make again. If you don't have the time or ingredients to make real baked corn, this is a great recipe.

Basic Microwave Risotto

Not only is this easy, but it is sooo good! Even better than I have had in restaurants. I didn't have wine so I used chicken bouillon dissolved in water, also left out the garlic. Had some edamame and added that..wonderful! Had it for lunch and dinner. Can't wait to make this for guests. Update!! Just made this for dinner with crab cakes..my hubby is not a big rice "fan". He had 2 helpings and made a "TV" dinner with the leftovers..that says a lot!

Awesome Broccoli-Cheese Casserole

Delish! Used fresh broccoli. Didn't have cream of mushroom soup, used cream of broccoli soup and added some sliced fresh mushrooms. Used 1/2 cup mayo and 1/2 cup sour cream. Topped with Panko bread crumbs. Wonderful!

Fettuccine with Sweet Pepper-Cayenne Sauce

Fantastic Potato Salad

This is the best potato salad I have ever had. And I am not a big fan of potato salad. Hubs loved it too and he is a potato salad fan. I will never buy potato salad again.

Honey Baked Chicken

This tasted like something I would get in a really nice restaurant. I salted & peppered the chicken before I baked it, also used Dijon Mustard. Hubby loved it! I made it with the microwave risotto on this site. Did not have wine to add so used same amount of water and added chicken bouillion, turmeric and some frozen peas. Hubby, who is not a big rice fan, loved it too and said..don't change a thing. Thank you Helen..this is going on my menu for guests.

Broiled Tilapia Parmesan

This is so easy and so good. I did sprinkle the fish with Old Bay, added some panko bread crumbs to the cheese mixture. It has become my go to recipe.

Popa's Simple White Chili

This is so good. Had most of the ingredients on had..except..had an open box of vegetable stock. Used that and added some chicken bouillon to it. Yummy. Thanks Brian!

Amazing Stuffed Peppers

Slow Cooker Creamy Beef Stroganoff

Used a London Broil. YummO. It fell apart. Melt in your mouth. Cheaper cut of meat, but just as good. Also, added noodles to crockpot last hour which gave the noodles more flavor than just cooking them. Had to add a little beef broth when I added the noodles. Hubby even liked..and he is not a big beef stroganoff fan. He said..yes..make this again.

Baked Teriyaki Chicken

Sauce was delish. Used 3 thighs and 3 legs with the same amount of sauce. Did take about 1 1/2 hours baking time till chicken was done, but well worth the extra time.
