About this Cook
I like to cook, and I'm pretty good.
My favorite things to cook
Anything sweet or Italian.
My favorite family cooking traditions
Make dishes that are so memorable that my family and friends ask for them again and again.
My cooking triumphs
Magical Asparagus and Shrimp Salad
My cooking tragedies
One time I accidentally used cooking wine in a sauce that had already gone to vinegar. I didn't realize it until I tasted the Chicken Piccata. It was truly awful, but my dog loved it. : /

Coconut Pumpkin Nut Bread
Loved this, modified. Here is what I made: 3 1/2 cups all-purpose flour, 1 Tablespoon Flaxseed meal (acts as an egg), 1 cup packed dark brown sugar, 1/3 cup white sugar, 1 (15 ounce) can pumpkin puree, 1/2 cup vegetable oil (I used grapeseed oil), 1/2 cup applesauce, 2/3 cup coconut milk, 2 teaspoons baking soda, 1 teaspoon salt, 1 teaspoon ground nutmeg, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon almond extract. 1. Preheat oven to 350 degrees. 2. Grease and flour two 8 x 4 inch loaf pans. 3. Combine flour, flaxseed meal, sugars, pumpkin, oil, coconut milk, baking soda, salt, spices, and almond extract. Mix until well blended. Pour into prepared pans. 4. Bake for about 50 minutes, or until a toothpick comes out clean. Remove from oven. 5. Cool completely.

Chocolate Mint Candies Cookies
I followed the recipe exactly, cooked the first batch for 8 minutes. The top and edges of the cookie were cooked. I then added the mint, then let them cool on the cookie sheet for 10 min before attempting to remove them. When I tried to use the spatula to get them off the cookie sheet, disaster struck. The center of the cookie where the mint melted buckled, and the cookie would only come off the pan in a U shape. It was a big gooey mess. In my second batch, I cooked them for 10 min. Exact same result. Having a cookie taste good doesn't make up for the fact that it doesn't actually look like a cookie.

Pure Maple Candy
I followed this recipe exactly, and the maple sugared. Add to this that it doesn't say to spray the mold so that the candy comes out, and since I didn't do that, the candies stuck in the molds. I had a pure maple disaster.
