Butternut Squash Soup

I have a tendancy to stay away from bullion so I use organic free range chicken broth, 3 cups and use a packet of Crocks Spicy Soup mix and remove the onions prior to puree. No cream cheese needed.

Cream of Pumpkin Soup

I use fresh pumpkin by cooking it with the chicken broth and onions, I remove the onions prior to puree and add a packet of Crocks Spicy Soup Mix. Fabulous flavor and no cream needed.

Yummy Taco Salad Dip

Doesn't serve 56 but enough for a small gathering. I use black beans a layer of fresh salsa and lime juice, add diced green chili's. This is a party pleaser.

Green Sauce Enchiladas

The rice should have some onion sauted with it. Cook the chicken with some salsa and onions for flavor and add a can of chopped green chilis to the end mixture. Stuff the tortilla with cheese and chicken mixture. Never use a microwave for cooking.

Ian's Potato-Vegetable Soup

I try never to use canned soups or bullion to my soup base because of the preservatives, msg and sodium. Instead use unbleached flour while sauteeing onions and celery. Use liquid beef stock and white or red potatoes have better flavor.

Brandied Candied Sweet Potatoes

These are YAMS, not Sweet Potatoes. Sweet Potatoes are off-white and do not have the flavor of YAMS. I add pecans and some cranberries for flavor and color.
