Mendocino Chicken Salad

WoOoWza!! So tasty!! I always my whole life made the same old same old Chicken Salad (mayo, onion, sweet relish, and boiled egg), but recently tried some with grapes and nuts and wanted to find my own to try at home. I went with this recipe, and on the note of another reviewer I added dried cherries. WOW! I followed everything to a T and it tastes great, my grocery store was out of fresh basil so I used dry and this recipe is FANTASTIC just as it is, how wonderful that you shared it! Also on a another note, I used one of those chopper things and prep time was a breeze, even for the almonds!!

Heavenly Hot Dog Sauce

Very good Hot Dog Sauce, a little finer in texture then you regular canned stuff but a great taste. I liked it alot and it made alot too, for the next day. A+

Hudson's Baked Tilapia with Dill Sauce

This is a great quick recipe for this dish and this sauce is AWESOME! So tasty and could easily be used for salmon, or even chicken in my opinion. So tasty, next time I might use a smidge less garlic but we loved this dish and it looks nice on the plate too!!

Vietnamese Fresh Spring Rolls

WOW! I have always loved these but been afriad to try them, I always thought they looked hard! Very easy! I didn't find Garlic Chili Sauce, so I used Sweet Thai Chili Sauce. I didn't have any of the mint or Thai Basil. I used 4 pieces of shrimp (2 on bottom, 2 on top)cut in half lenght wise, cilantro, matchstick carrots, a cole slaw cabbage mix, and bean thread noddles. YUMMMMMMY!! I LOVE the fish sauce, I made it up before starting anything else and put it in the fridge, its GREAT! I am SO glad I tried these and very GLAD I have enough to make more this week!! Easy recipe to follow!! Also....I have made egg rolls in the past and personally feel RICE PAPER is MUCH easier to work with than Egg Roll Wrappers, they are very stretchy, and the best tip is take them out of the water, a bit before they are soft, they get softer while you are working! I am ready for my DH to get home, I tested 1/2 of one and am ready for more..lol.

Fish Tacos

I messed this up somehow =( But still giving it 5 Stars fr THAT SAUCE! I have ate 2 corn tortillas with JUST it!! My fish tastes AWFUL. I have never cooked with Cod before, so am not sure what I did wrong but I marinated it in some lime juice, olive oil, S&P, ginger, garlic. OMG it is SO nasty! It is ok, but the finish is so bad it makes you spit it out. I decided to not fry it and go with the lighter option of pan frying. I don't know what I did wrong, but UGH! I didn't use Jalapenos in the sauce or capers, and cut back on the cayenne bc of our little one. But its a DELICIOUS SAUCE. I also made crab cakes and might eat the sauce with them too! Great recipe, don't know what happened to my fish, but I can ONLY imagine how tasty it would be!

'Chinese Buffet' Green Beans

My daughter who is 2 only eats these at Chinese Restaurants, so I was excited to find this recipe. I did not have Oyster sauce, so I used a lil Hoisin and Fish. They taste great!!! I am tasting the garlic alot now. I grated mine on a micro planer, I should have just sliced like called for!! But yea VERY YUMMY! Very kind to share this recipe, now instead of canning all our green beans next summer I will freeze some for this dish!

Chocolate Ganache

I wanted a white chocolate ganache so I decided to try this recipe. YUMMY! Everything came out perfectly and it whipped up great! I mixed in some coconut & crushed pecans because I am going to use this as a filling in an Easter cake.....fantastic!

Roasted Rack of Lamb

We love lamb but have never tried it at home. This is DELICIOUS!!! The recipe is quick and easy and it all cooks in 1 pan! The crust is great and ours was cooked to perfection! Great Recipe!!!! I did add more garlic but other than that exactly to the recipe.

Basic Beurre Blanc

I had this on a crabcake recently & loved it. This recipe yields a lot, so next time I might half it. It broke on me but still tasted good. I used this on "maryland crab cake II" sooo yummy!!!

My Crab Cakes

WOW! These are superb! I agree with others that the crakers make them taste so good with the crab. I made the "basic beurre blanc" to go with these and they were heaven!! I only added a tad more Old Bay & used yellow onions instead of green but other than that follwed the recipe! DELICIOUS! **update*** made these again for the 2nd time, they are fool proof and very quick & easy to make, I pattied these up larger then before used a can of backfin meat, a can of special, and a tin can of crabmeat (by the tuna)....still tasted great!

I hated this recipe. I made it twice back to back to try and get a better flavor but YUCK. The garlic was WAY too strong in the first batch (4 cloves). And the second bath was bland even after I added a lot of sale and cayenne pepper. I think I would be better off just jazz-ing up some mayo next time...lol. I wanted to try it to make it from scratch, but failed on this one.

Creme Brulee

Love love love this!!!! Tried creme brulee for the 1st time and HAD to try to make my own. Simple and easy to prepare and I HIGHLY reccomend real vanilla beans, the smell is heavenly. Great recipe, very easy with a wonderful result.

Best Tuna Melt (New Jersey Diner Style)

Being from the South we tend to over do it with tuna and chicken salad. I always threw in relish, bioled eggs, onion, etc etc. When I saw this I was skeptical but I love a tuna melt so I decided to try it. WOW! Its a really great recipe and one I have made 3 times now. Its the perfect sandwich on those hurried days, and toasting the bread is key a lil toast then the tuna helps keep it crisp! GREAT RECIPE!

Crazy Cake

What an easy cake!!! I was only going to make a half batch, but at the end added the whole 2 cups of water!! So I had to go back and add the additional flour, sugar..etc. Well this cake was SO easy I just sifted it all into the batter I already mixed in the pan and re-mixed it again. It cooked perfectly! I made a Buttercream icing from scratch (2 sticks butter, 1/3 bag powd sugar, heavy cream, cocoa powder & light corn syrup) it was a great cake to toss together and with an easy clean up. THANKS

Yellow Squash Casserole

Delicious! Made this today and loved it! I made everything the night before and put cracker topping on & baked today. This recipe is good for those who don't like the canned soups. Very tasty! We used squash from our garden =)

Corny Green Bean Casserole

I doubled the recipe and the sour cream did over power a lil, I used fresh canned green beans and white corn from our garden so I may have under salted, but the sour cream taste was too strong for my taste. But will try again!!

Chicken Enchiladas with Creamy Green Chile Sauce

Its in the oven right now! I forgot to get broth at the store and had already drained the seasoned water from the chicken before I realized I was out...sooo....I used 1 can red enchilada sauce and 1 can water, it tastes good, and it smells great! My husband doesnt like food with tomatoes in it, so a lot of the time he wouldnt eat enchiladas, this creamy sauce is perfect for us both!
