Beef Tenderloin With Roasted Shallots

Reviewed: Mar. 29, 2011
The beef tenderloin was such a delicious cut for this recipe! My husband LOVED the sauce. He's asked that I make this every year for Christmas. I took others suggestions and paired this with jasmine rice and it was perfect together!

Chicken Parmesan Bundles

Reviewed: Mar. 30, 2011
This was good and easy to make. I didn't have enough mozzarella left to put on top so I served with noodles in marinara sauce. I thought the Ritz crackers gave the coating a nice flavor. Will try again!

Turkey Breast with Gravy

Reviewed: Dec. 3, 2011
The seasoning made the gravy to die for!! I did add chicken broth to the pan to keep it moist and add to the gravy. I will definately be making this again.

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Dec. 3, 2011
This is a favorite! The dill sauce is a wonderful compliment to the spicy fish. Leftover sauce is good on veggies.

The chicken turns out very flavorful and juicy. We always fight over the bacon.

Broiled Grouper Parmesan

Reviewed: Jan. 27, 2012
This was good. My husband who does not like a lot of fish liked it a lot. I thought it had way too much of a parmesan taste.

Tres Leches (Milk Cake)

Reviewed: Jan. 27, 2012
I would give this 4.5 if I could! It was delicious. I used cool whip for the topping otherwise I didn't change a thing. The only reason I didn't give this 5 stars is I thought it could have a little more milk on the bottom. But that is just my opinion as I love milk. Give it a try!

Pizza Carbonara

Reviewed: Jan. 27, 2012
YUM!! Good out of the oven and good the next day! I used mozzarella as that is all I had, but I don't think it made a difference. Nice pizza recipe for a change from the usual.

Orzo and Rice

Reviewed: Oct. 17, 2012
I doubled the bouillon, added a little salt and some fresh parsley at the end. I found it to be ok for a side dish. If I make again I will add a few more spices to give it a little more flavor. I will also add more liquid as my rice was crunchy.

Beef and Parmesan Pasta

Reviewed: Dec. 17, 2012
I took others suggestions and added onion and garlic to the beef, as well as some tomato sauce with italian seasoning to the broth mixture. I didn't have any zucchini but it was good without it, although zucchini is so mild I am sure it would be delicious in it.

Six Can Chicken Tortilla Soup

Reviewed: Feb. 2, 2013
I love how easy and cheap this recipe is. Even better my husband loved it more than a different version I make of this soup. I did use a rotissere chicken and add a few tablespoons of taco seasoning and used cilantro & lime rotel tomatoes. I will definitely make this again!

Christmas Morning Egg Casserole

Reviewed: May 14, 2013
Simple recipe with loads of flavor. I took it to a brunch and everyone complimented me on it. Even people who said they normally don't like egg casseroles. I used sharp cheddar cheese as that is all I had, cubed ham instead of diced and cut the salt down to 1/2 tsp. I gave it 4 stars instead of 5 because it was really watery on the bottom after baking. I will make again but will probably add another egg or two.

Awesome and Easy Creamy Corn Casserole

Reviewed: Oct. 10, 2013
This was really good and so easy to make. I used vegan sour cream and egg replacer to accommodate food allergies in my house, so I don't know how it would have turned out if I made it as written. I also cut the butter in half. My husband and kids thought it was weird but everyone else at dinner liked it. It definitely needed more than 45 mins to cook.

Truly Delicious Brussels Sprouts

Reviewed: Dec. 26, 2013
Make just as written! I do let my brussel sprouts cook until just a little brown and squeeze half a lemon before adding salt and pepper. That's just my personal preference. I could seriously eat brussel sprouts this way every day!

Sausage and Cornbread Dressing

Reviewed: Dec. 26, 2013
I would give this 3.5 stars if that was an option. I wanted to love this, but it needs some work. Way too dry. I tried maple sausage as some suggested and I wish I had used spicy. The maple sausage just made it too sweet for my liking. The flavor was good, so with some tweaks this could be a great dressing.
